Abby’s Favorite Aloo Tikkis
Ingredients
-2 Big boiled Potatoes
-4 Tender green beans boiled
-2 tender carrot boiled
-1/4 tsp cumin powder
-1/4 tsp turmeric powder
-dash salt
-2 tbsp Poha/flatten rice
-1 egg white
-1 tbsp olive oil
-Boil potatoes, carrot & beans till tender, let it cool peel potatoe skin keep it aside
-Now add to a blender and carrot & beans blend to a paste, Transfer to a bowl,
-Add boiled & peeled boiled potatoes & mash well with beans & carrot, Add Poha, egg white, cumin powder, turmeric, salt & chopped coriander leaves mix
well & refrigerate to 20 minutes
-After 20 minutes take lime size ball flatten to give tikki shape.
-Dust with wheat flour
-Heat a pan with olive place tikki cook both side until slightly golden and crispy.
-Serve with rice/neer dosa
PANEER BHURJI TIKKI
-Remaining tikki stuffing add homemade paneer Bhurji
To Make Paneer
500g milk
1tsp white vinegar/lemon juice
-Sprinkle salt, cumin & coriander powder
-1 tbsp Olive oil
-Heat milk in a deep pot, bring milk to a boil on a medium heat
-Add vinegar or lemon (please use only one), turn of the flame, give it a good mix
-Milk beings to curdle immediately
-Place the strainer over large bowl place cheese/muslin cloth
-Transfer all of the curdled milk to the colander.
-Squeeze excess whey, keep heavy object just to set the paneer for 30 minutes
-Remove paneer from the cloth
And set aside
-Heat a pan with olive oil spread paneer Bhurji. Sprinkle salt, cumin power, coriander powder, garam masala powder cook for 2-3 minutes stir and set aside
-Take half portion of aloo tikki mixture, mix prepared paneer Bhurji mix, size round shape
-Pan fry both side until golden.
