ANSWERS TO FREQUENTLY ASKED QUESTIONS
♦What is the temperature of the cool water?
-12-18C
♦ At what temperature do you bake bread?
-245-250С
♦ At what temperature and for how long should the pan be heated?
The pan must be put in a cold oven half an hour before baking bread, turn on the temperature 245-250C and heat for half an hour.
♦ What to do if there is no cast iron pan?
-Take any cake or cupcake mold and make a foil tent instead of a lid. Also, some subscribers have had excellent results when baking in a cast iron skillet with a built-in lid, when baking in aluminum pans with another mold covered with weights, and in ceramic pans.
♦ Is it necessary to heat the mold?
-YES
♦ Can live yeast be used and how much is needed?
-Can. It will take 3 g of live yeast.
♦ Can I use sourdough instead of yeast?
-Theoretically YES, but I haven't personally tried it. I can’t answer how much sourdough is needed, since I didn’t bake this bread with sourdough.
♦ Is it necessary to bake on baking paper?
-NO. You can melt on a kitchen towel and then transfer to a saucepan and bake in a saucepan until cooked without paper. The author of this method does just that, but I'm more comfortable with baking paper. If you are not sure about the quality of your baking paper and do not know if it can withstand such high temperatures, do not bake on paper, but put the bread directly into the hot pan.
♦ What other than flour can be used to form bread for topping?
-Bran or cornmeal
♦ The bread is small. This is fine?
-There is only 400 g of flour in the recipe and the bread cannot be big. If you want more bread, then take the ingredients 2 times more.
♦ Is it necessary to bake with bread flour?
-NO. With the usual white all-purpose flour you use for baking, the bread comes out just fine too.
♦ What is bread flour and what are its ingredients?
-Type in Google the combination "bread flour" and you will get a lot of information.
♦ Does the dough have to go through 12 to 18 hours of fermentation?
YES, otherwise you will get a completely different texture and taste of bread.
♦ I have seen such similar recipes on other channels. So which one is the best?
-I don't follow other channels and can't know what recipes are there. My recipe comes from a book by Jim Lahey, who is the author of the no-knead bread method that is baked in a pot.
♦ Why are you showing the book? Do you advertise it?
-NO NO NO! I show with the goal that you know the source from where I got the recipe.
♦ Is that ciabatta?
-NO. Ciabatta is not baked in a saucepan, they are not baked under a lid. Ciabatta is baked at temperatures below 250C and baked on a baking sheet. Also, ciabatta is molded in a completely different way.
I wish you bon appetit and good mood! :)
