As a Hispanic. I know some of us like to add Cotija cheese, lemon, and maybe even Valentina or tapatio to ramen. Cotija is a hard and dry cheese. Therefore. When boiled it becomes soft, but not downright melted. It adds flavor to the Ramen due to the salty nature of cotija. As well as adding a chewy texture. All in all. The savory Ramen, with the salty cheese, the acidic lemon or lime, and a hot sauce of choice is a perfect flavor combination if I do say so myself.
