Never had Jeju pork so would love to try it. Iโve had horse steaks in Switzerland and I love it. Every time Iโm in Switzerland, my friends make sure I have horse steaks, raclette, and fondue. Pork rinds are baked and super airy/flakey. In Mexican markets, some have meat attached. Either way, theyโre good but not the same as crispy crackling, which I love more. It's basically same/similar as Berkshire pig(Black pig). But the secret of the unique flavor is the fermented anchovy source and grilled with charcoal.
The secret why anchovy source is so tasteful and good with pork is when fermented anchovy is boiled, the fishiness vaporizes and the Umami flavor kicks in. ^^
