U can use just librarians for infinite emeralds. find a trade for bookshelf and book, 1 bookshelf gets converted to 3 emeralds

Duckio, on youtube, there is a tripwire farm which produces a lot of hooks which is easily infinite emeralds in a matter of a day. You can also use trapdoors to protect the villagers

As for why the Sapling won't grow, birch trees (and some other kinds of tree) require only air blocks in their vicinity (for birch I think it's a 10 block square centred on the sapling). That birch sapling was on a gradient and had grass blocks right next to it, preventing it from growing.

Video idea: I think it would be such a cool video for you to go out and find two of the very rare blue axolotls and once you get them, you can build just one big massive tank for them to live in and then you can breed them to create an army. Not only that, I feel like, even though it would take a long time and would be grindy and risky, but it would be fun if you gave them a full diamond beacon with the beam being blue. I just feel like it would be just such an awesome build that would be so fun to just be able to see in your world.
