In the US, the Federal government has not passed any compliance guidelines for ADA / WCAG. However, the courts have set a common precedent that AA is appropriate for most cases. In terms of usability, most websites should stick to AAA if large amounts of text are present, for example a blog post.

Each of the criteria in here have a level specified: www.w3.org/TR/WCAG21/ For example 1.1.1 Non-Text Content mentions that it is at Level A here: www.w3.org/TR/WCAG21/#non-text-content

For a video on color contrast, you sure had a bad contrast! I could barely see a difference on the chart
