You dont need to fine the sensitivity, just where you select the aircraft and liveries go down the bottom and select customisation. Bring ailerons, elevators, rudders to -1 % Not everybody seem to know this option.

Airliner doesn’t pressurise the cabin but dépressurise as on ground you’re at 1 bar, when you cruise to FL 350?, the cabin pressure is equivalent at 8000fts so less than 1 bar. This done to limit the delta P to reduce the strain on the structure
