The balanced equation for the reaction of magnesium with nitric acid is: Mg + 4 HNO 3 → Mg(NO 3 ) 2 + 2 NO 2 + 2 H 2 � ↑ Mg+4HNO 3 ​ →Mg(NO 3 ​ ) 2 ​ +2NO 2 ​ +2H 2 ​ O↑ Similarly, for calcium: Ca + 4 HNO 3 → Ca(NO 3 ) 2 + 2 NO 2 + 2 H 2 � ↑ Ca+4HNO 3 ​ →Ca(NO 3 ​ ) 2 ​ +2NO 2 ​ +2H 2 ​ O↑ The liberated hydrogen gas ( H 2 H 2 ​ ) is a result of the reduction of protons ( H + H + ) by the metal: 2 H + + 2 e − → H 2 ↑ 2H + +2e − →H 2 ​ ↑ In summary, the reaction between magnesium or calcium and nitric acid involves the reduction of nitric acid to nitrogen oxides with the simultaneous production of hydrogen gas.

During roasting, especially after the first crack and at bean temperatures around 200 °C, chlorogenic acids are converted into the corresponding lactones in a splitting of one molecule of water. That is the crucial chemical step turning the acidic chlorogenic acids into bitter tasting chlorogenic acid lactones
