My husband is a chef, classically trained French Chef. During our 24 years together I have not been called upon to cook. Since I have begun watching you, I have been looking at recipes , gathering inspiration. Now I have begun to cook! He has rescued me with the seasonings and what not, but I am cooking and I owe it all to you, watching you has made me brave.

@@MaraSpr While the thought is there, I have to remind him that it's just us. Then he can make some simple but tasty food. I love Becky for her perspective, Her food in deceptive. Until I started watching her, I always shied away from seasonings, I used salt and pepper but never to her degree. However when I followed along, I was amazed at what I could create. I just made cabbage rolls for the first time., everybody loved it. My first time using paprika too. as for chef cooked meals, imagine going to an upper end restaurant, your very excited to order the special meal everybody has been raving about. It arrives, you take your first bite and no fireworks go off. Why, because your home meals taste so much better! This happens very often, so since he can't duplicate fast food, we go there.

Keep going, ma'am. It's never too late to discover a passion. I grew up being taught by my grandma and mom who, in my opinion, were some of the best cooks and teachers. However, I still find myself discovering seasonings and cooking methods at 50 that they never taught or showed any of us in the family.

Becky and Josh, thanks for the fun! If you haven't shelled the beans yet, check Michelle at "more than farmers". She put them in an old pillow case, smacked the case on the porch for a while, picked the beans out and then poured them from one large bowl to another. The breeze blew the small chaf away. Becky if you leave carrots in the ground until the first frost hits them then harvest before a FREEZE your carrots will have a much better flavor & be sweeter. Most of Us older Gardeners have been doing this for years. We don’t harvest until a chance of freezing. Hope you will try this. (You can google to check my advice). Just a tip when peeling roasted peppers, if you fill a bowl half full of water then dip and peel. The skin ans seeds come right out.

I missed the live but getting to watch a video anytime is a great time. As far as being in Oklahoma and the weather being hot, we here in Texoma (which is Texas/Oklahoma border) would call the upper 80-90s a cool front. 😂😂😂. It is 85 here today. We are supposed to get cooler weather next week low 80- mid 70s. I absolutely love your channel. Your home and garden is a beautiful dreamland. My family know you as my Washington girl. Hi Becky, I have been following you since you started your channel. I am from South Africa. It is a real blessing to watch you. I have my own garden (very small) but my peaches, tomatoes and green pepper does really well. I also have chives, mint, blueberry, strawberries, beet and onions.

Thank you for mentioning your little guy, I’ve been wanting to ask about him because you never mention him and I was worried something happened to him and I didn’t want to upset you by asking about him so thanks again and I’m so happy to hear that he’s doing great! I wanted to tell you that I freeze a ton of my herbs by chopping or food processing them and put them in ice cube trays then top with a bit of water then freeze them and once they’re frozen I take them out and put in ziplock bags, it’s great to throw them in my soups, stews, hamburger for patties or meatballs and meatloaves ♥️🙏🏻🇨🇦

Hi Becky! When you freeze your diced peppers, do you ever notice that the pepper smell and taste permeates other foods in the freezer? A few years ago I froze some stuffed peppers, wrapped tightly with aluminum foil. Everything in the freezer smelled and tasted like those peppers, even the ice cubes! I’ve not tried to freeze peppers since then, so I was wondering if you or any of your fans have had similar experiences. Love your videos Becky, I’m 81 yrs young, still cook for my husband and I every day, and for our children and their families every chance I get! I have learned so much from watching you, you have mad cooking skills girl! BTW, go ahead and tackle sourdough bread baking, it’s not really complicated. I acquired a starter in 2020 and I’m still making sourdough regularly! ❤

I have frozen peppers all the time I use doubled freezer bags as I don’t own a food saver. Have no problems with peppers onions or garlic smells going into other foods

I freeze my peppers after I dice them spread out on a parchment covered sheet pan. I spread them out, place the pan in the freezer and a few hours later, take them out and put them in quart freezer zip bags. That way, when you need some, you can open the bag, take out however much you need, then zip the bag back up except for an inch or so and squeeze out the air and finish zipping them up then throw them back into the freezer for next time.

I freeze dry all my peppers. They're so good that way. I love it. I also freeze dry my onions. This year I have freeze dried my whole garden

I am so impressed with your kitchen. The flow factor is remarkable. I do a lot of canning. My specialties are pickled okra and apple butter. I have a pumpkin bread recipe that is now being made by our third generation. Thank you. Your channel is so much to watch.

That was so fun. And helpful! I have a kitchen full of sorted peppers and was running out of ideas. Thanks for walking us through the hot sauce prep. I will do that tomorrow. Once again you came to my rescue at the right time. I still suggest you get the Ball electric water bath canner. You can put it right by the sink and it’s much faster at bringing water to a boil. No more carrying water to the stove and back.

I, too, have been watching your posts all summer. I ruptured three discs in my back 2 years ago and am waiting on surgery. I haven't been able to do a lot physically, - had a small garden . . . tomatoes, zukes, etc.; and watching you cooking and working in your garden has been a way for me to enjoy those things vicariously through you! On the subject of peppers and heat level, I’ve been intrigued by the Notapenos and now Habanatos that Sarah at Living Traditions Homestead has been growing. Like you, I enjoy the heat. But peppers with their own unique flavors and no heat might be fun to try for the non heat lovers. Fun live to watch, you and Josh make a good team with keeping up with the questions and comments.

Thanks for being YOU. I truly enjoy your flog. I made breakfast burritos for my husband and we found if you dampen a paper towel, wrap the frozen burrito and microwave about a minute and half, the tortilla doesn’t dry out as bad. Best wishes from Texas.

I think not straining peppers will develop a better flavor, better to strain afterwards. I love that you're doing your best to eat organic, healthy! Becky, if you put thin sheets of copper on the rim caps of your flower beds, then you will have very few slugs. Slugs will not cross over copper. You might need to use Slug-O the first year to take care of what is already in the bed.

I grew Ahi Cristals this year too and they were crazy prolific! You should try the Ahi Mango next year, the flavor is amazing! Our absolute favorite new pepper this year has been the lemon jalapeño, they will always have a spot in my garden from now on.

Thank you both. I have all the toys....just need motivation to break them out! I am embracing the smaller jars! My husband is a willing guinea pig for most recipes but often I can things that only I like. I have only had quarts and a few pint jars in my canning stash. I inherited most of them from friends and family over the years. As we get older our needs are changing so I have been investing in small jars a bit recently. It has made such a difference in my refrigerator! I am a creature of variety. I don't want the same thing every day. The small jars give me variety, more freshness and takes up so much less space, I also, like you, tend to gift my canned items. This allows me to share with more people. Your videos are inspiring and motivating. Julia would be proud 😊

For slugs, we "mulch" with pine cones! I'm not sure if there any negative effects using them in a garden, but they work wonders around our hostas which slugs love.

Becky, I make very hot, hot sauce for my husband. I blended it in my very expensive blender. Then one day I made something with the blender and end up with hot apple sauce🥵..heads up if you plan to blend anything else in that blender again. I ruined a double batch of applesauce- I was devastated as I canned it and realized when I open one to eat it, fire mouth! Now I have two of these expensive blenders and one is marked hot and is for making hot sauce. 🤣😂

While watching the replay I was like you have enough vinegar in each pot you would have 2 cups left😂. I have done the same thing many times and would always have to remeasure as well. Such an informative video. As many comments came through about you being an inspiration Becky you are very much an inspiration to me I started a garden 2 raised beds for now I plan to add more next year and I have also gotten chickens. I have been thinking about getting bees as well.. so thank you for taking time out of your day to teach so many!!

So just a few tips, when you blister and steam peppers take a rag or paper towel while holding the top and gently wipe the pepper down and the skin will fall off leaving the 🌶 whole and undamaged. To reheat frozen burritos 🌯 take a paper towel and wet it, wrap the burrito and microwave it from frozen. No hard tortilla. You can do the same with bagels and English muffins. For softer bread, put a cup of water next to the food in the microwave

In Texas we use a metal edging for flower beds to plant our strawberries in because we have a bad slug problem here. It works every time the Slugs hate it.

Thanks for all you do! Loved the trip to Oklahoma, I’m an Okie native and when you were here it was not far off normal. You visited my Trader Joe’s and i loved it because you gave me a seasonal product preview before my quarterly trip! Much appreciated!!! Your sister was a camera natural! Fun to see you all interact together.

​@thefeministagenda9544 Becky and Josh are a part of our lives...a small occasional mention on how he's doing is just courteous to ask... you find it "concerning" really? 😂 she didn't ask anything personal only how he is doing... and Josh didn't have to mention it but it is nice that he did... no one would have insisted if he wouldn't have said a word

I know 😢 like totally keep him out of the videos! But he is a human in your life just like your mom, husband, sister, nieces and nephews… like I know this is her job, but I work too and I’m always talking about my kids! It’s like we got to be on her pregnancy journey and her birthing journey, then nothing!

My favorite thing ever is the bottom of the ruffle bag or any chip sprinkle some fine shredded cheese and tons of hot sauce or salsa shake it up and chow down. Yum so good and no waste

I just watched this back .. I believe i fell asleep shortly after the live has started lol .. i loved the suggestion of freezing the peppers like the garlic .. will need to try it this way .

I live in Hinkley California and your sister Sarah's description the way they have fall out there perfectly describes in Hinkley California---- we have extreme cold in the winter and extreme hot in the summer we spent a whole complete Summer from the end of May in the triple digits and just yesterday we finally got down into the low 90s Middle to upper 80s
