Hi Becky, did you make a mistake when you said parsley is a stronger flavour than coriander. I find that coriander can be so overpowering if you use too much.

I just wanted to say awesome job well done. Last year with a newborn you did the PC for 2 months. You and Josh got snowed in for at least a week or so. Even going over by weather and did well. This year, with a 1 year old and given him his own budget for fresh fruits, vegetables and A2A2 whole milk. This year was NO Water and you still managed to pull it off with help of others, feeding them and using panty of theirs too .

My mother is Mexican and she never used lard for refried beans. We just mash them and use some bean juice to get the Right consistency. Also, using a crockpot to keep tortillas warm works very well.

My daughter wanted a raspberry lemonade cake for her wedding. I made lemon cake with lemon buttercream. I pureed the raspberries and reduced them by half then mixed them in some of the buttercream. The raspberry buttercream went between the layers. It was really good!

The food looked delicious!! FYI... Adjustments can be done to tighten the mixer head to stop the wobbling. 1) Check the beater to bowl clearance using the "dime test". 2) Tilt the the mixer head back and adjust the screw underneath (right to lower, left to raise) with a flat head screwdriver. I had trouble with my Kitchenaide during my Xmas baking and I also discovered the pin was protruding and loosened as well. Once I did the dime test and tapped the pin in place, all was well.

Looks delicious. Your mom, sister, & Josh's mom etc are all fabulous cooks as well. I miss when my grandparents & mother/father were all still alive/close & my aunts & uncles ...all of us gathering for holiday/birthday get togethers or once & awhile just because we missed each other or extended family came to town to visit. Everyone made delicious food & had their signature perfected dishes or desserts/treats brought to the gathering. I'm over 50 now & it's just my 3 children & I for the holidays. Of which my daughter has become a phenomenal cook as well. She hosted Thanksgiving the last two years in her & my son in laws new home after I had some health issues & was unable to do it all the last 2 years. Making new traditions now. But I miss my parents & grandparents so dearly & loved going to get togethers as it too was always about a 10 course meal with several dessert options while we had great conversation & played cards & board games after. My children started a tradition of watching whatever new marvel movie came out that year after our meal for Thanksgiving & Christmas which is a wonderful new tradition for us. Much love my friend.
