I do all of these! And then there's my all time favorite - I'll decide to pick up a napkin or other piece of trash and toss it after I write the note or list. Half an hour later, I'll go in to read my note or list, and don't see it, but I'll spend about 20 seconds being surprised by the napkin sitting on the counter and start through the process. Hmmm...could've sworn I threw that away...I DID throw it away because I remember walking to the trash...and what the heck happened to my note??? THEN the penny drops and I realize I tossed the note and saved the napkin! 😂😂😂

Becky you are correct to wait to wash your tomatoes, washing produce of any kind before storage actually speeds up spoilage even if it's thoroughly dried & left out for air to circulate, any added moisture will speed up how quickly it goes bad so waiting until you process to wash your tomatoes is best unless you are freezing then yes absolutely wash before freezing

I think most Americans would consider that too thin. I, too, prefer thicker sauce for most of my pizzas, but use thinner sauce - more like purée - for my "grandmother style" or "nonna style" pizza.

When washing a large volume of tomatoes clean your sink, and fill one side. Dump all the tomatoes that will fit I to the filled sink. Rub the tomatoes as you move then to the colander or other side. It's MUCH faster for me

I’m an Italian grandma who has been cooking for many, many years. I’ve never purchased or made “pizza sauce”. On pizza I just use a thick marinara sauce and spice it up a bit more. When my grandchildren were young they would want to make English muffin pizza and only then we’d use jarred marinara sauce to make things easier on grandma. 😊 I’m glad you showed how you scape the sides of the pot as your sauce is cooking down. It’s a trick my aunt taught me so very long ago. What you’re scraping back into the pot is concentrated sauce packed with flavor! It’s wonderful to see all those beautiful jars ready to be stored away … bella abbondanza! (beautiful abundance!) 🍅

@AcreHomestead, how do you like your Bosch mixer compared to your kitchen aid? It’s just my husband and I most of the time but I make a lot of bread. Have you made single recipes of sandwich bread in it? Becky, I’m curious if you could add the roasted tomatoe skin powder from your other recipe to your stovetop recipe? This would add the roasted flavor and also help thicken it

Yes, you certainly can. Keep it mind it would require a lot of powder for that flavor to be added. A bonus is it would also save time reducing as it would also thicken it.

Hey Becky, you can try roasting your onions then adding those to your sauce. Roasted onions with that little black tinge is an awesome flavor. You could just try with a few tomatoes. I do this with a jarred passata, it’s fantastic! I also use roasted garlic as well. 🙂

I put my frozen ones in a roasting pan and let them defrost and roast at once. Also some I cut in half as they defrosted waiting for my oven and it all turned out great

Today I saw a man with tons of Roma tomato’s cut the bottoms off, put them flat side down on a cookie sheet and roast for ? When done, the skins just pulled right off 🤷🏻‍♀️

Why not just freeze dry some sliced tomatoes for turning into powder. Why does it need to be the skins if it is so much extra work. It's not like you don't have the tomatoes spare! I truly admire the energy you have to create so many lovely products.

@@michelleimeson3701 I get that. But the extra time and effort with roasting the tomatoes may not be needed if the hob method is good. Sliced tomatoes would be a quick payoff to get the powder. I get the waste not want not theory but sometimes time is just so valuable too.

If you freeze all the tomatoes and then defrost, you can strain off a ton of liquid plus the skins just fall off so you get a good happy medium between the two methods.

I never wash garden produce until ready to use it unless it is really muddy. I have been taught to do it by many gardeners in my family.

love this, After I put my tomatoes thru the food mill, I then put those contents thru a food strainer, and it gets very thick which I don't have to cook down and then I use the rest for tomato juice

Thanks for taking us with you today. I have been roasting them longer, flesh side up to help reduce the moisture and for so much more flavor. I just halve them (no coring for paste tomatoes but I do for quartered heirlooms) and roast at 350 for 30-45 minutes, then run them through the food mill. I like it so much better with less steam and less mess, I think.

Hi Becky regarding canning tomatoes...I follow safe canning practices however my ,,"recipe" is tomatoes with no onions and I've been doing it this way for 55 years. When I want to use my jar tomatoes for gravy/sauce I add in place of canned tomatoes. I'm not sure I understand the reference. That being said I think you're doing an amazing job. A food mill, like what she uses, removes the seeds and skins from the product. An immersion blender would mix those things up. It will depend on what you want your final product to be. There are hand operated food mills that are less expensive if that is something you would care to consider.

What an awesome idea subscriber! Cut the bottom of the tomatoes. Place on a cookie sheet bottom side down, & roast that way. How easy!!

Be careful adding too much pepper. It gets stronger as it sits on your pantry shelf and can give an off taste to your sauce. I learned that the hard way.

I put a large cookie/sheet pan under the end of my processor to catch all the juice that always seems to drip out on the counter. It saves the mess!

Can add tomato paste to thicken or cook in batches, let sit in frig and strain off liquid that floats to the top. Both of these shorten simmer time.

Just wondering, have you tried using your electric roaster to cook the tomatoes down? You might get the same flavor as the oven roasted, but the efficiency of the stove top. I've never canned tomato sauce so I'm just wondering in case I buy some tomatoes next year. ❤

When I use my roaster, it tadtes just like stove-top sauce as the skins aren't toasted. It does leave more stove space open!

This is my next project, last week I canned chicken soup, this weekend I canned sloppy Joe mix and a no salt red bell pepper, onion and garlic with jalapeños sauce I froze. Love seeing the empty spaces getting filled up on my shelves. Thank you for the inspiration...yet again!

Hi Becky, Josh, & Acre...When I open a jar of marinara or tomato sauce and I don't use it all, instead of trying to use it immediately, I put what's leftover in a plastic to-go container and freeze it. Then it doesn't go to waste! Love your channel! ❤

Yep, I lose my notes all the time😂. BTW does ur sister can as much as u do? Does she have a big garden? Do ur friends come by when u have extra vegs & fruit often when u have a lot? I’m so jealous, I grew 4 Roma tomato plants and 3 tomatillos just because I have very little space to grow. I live in the highlands of Scotland and I’m so happy that the tomatillos have given me fruit

Becky have you ever made tomato pie using fresh tomatoes. Just a bottom crust no top . Sliced tomatoes dipped in flour which has garlic powder , a little oregano,salt and pepper . Layer in pie plate with some fresh basil then parmesan and at the top use mozzarella cheese . Bake 350 degrees for 50 mins or bubbly in middle . I cover with foil for the first half of the bake . When I have lots of fresh tomatoes out of my garden I slice them up and flash freeze on cookies sheet on parchment papper. When froze put in freezer bags for thru the winter for tomatoe pie. It make a great side or a meal with salad greens. Can add peperoni slices too top also. Hope you give it a try . If you like pizza or those flavors.

A thought, if you’re putting the tomatoes through the food mill, is it necessary to cut end/core them? They get taken away by the food mill anyway 🤔

All those small tomatoes went into my blender, then the freeze dryer for powder. You're ambitious!

The cinnamon rolls with cream should be covered in foil. The recipe I use called for it. The cream absorbed into the rolls. Excellent and delicious!

A little fyi: my mom does the stove top method when canning tomato sauce from fresh tomatoes. If you want to save some time in cooking the tomatoes, cut all of them in smaller pieces. It will help cook the down even faster. Also she adds a leaf or two of fresh basil in her jar just before pouring the sauce in the jars. Well done, Becky. 😊

Hey Becky, I put all my tomatoes through my food grinder first then i cook it down....this cuts down on a lot of cooking time in my opinion..

From an Italian home marinara us just like u made. We, most of us, don't use oregano in marinara or spaghetti sauce, only in pizza sauce. I usually use puree add salt pepper garlic n oregano and olive oil

Just remember, how will you get your tomato skins in the future for tomato powder if you use only this method? It’s because of the oven roasting of the tomatoes that you were able to get the skins you needed for the powder. Just thinking out loud.😊

Love the idea of saving tomato skins however the skins have lectins as nightshades have. Lectins are hard on me causing nausea vomiting and diarrhea,same for lot of people especially with thyroid issues

Your mother tapes her instructions on the cabinet, or refrigerator. That would be a smart thing to do with your sticky note, or make a note in your phone! I am really bad about making lists then losing my list.

Why do you weigh your tomatoes for the recipe you making after preparing them instead of after? You loose several pounds in the preparation process.
