Homemade Rotel 1 gallon tomatoes - diced small 2 lg bell peppers - diced small 1 lg onion - diced small 4-5 Serrano peppers (use more or less depending on desired heat level)- seeded and finely chopped 3/4 c. Apple cider vinegar 1/4 c. Sugar 1 1/2 Tbsp canning salt Mix all ingredients together in a non-reactive pot Bring to a boil over medium -high heat. Reduce heat and simmer for 45 minutes. Canning instructions: Add 1/2 tsp lemon juice or citric acid to each 1/2 pint jar. Add the hot liquid to hot jars, leaving 1/2 inch head space. Wipe rims and add lids and rings. Waterbath can for 15 minutes. This makes 16-20 1/2 pint jars.

Becky! I need to thank you for the way you revolutionized my art career!! I've been implementing batch cooking into my life ever since I started watching you, but never did I think that working in batches would be a transferable skill for an artist with ADHD. I only ever have enough focus to start project, never enough to finish them. So instead of having them pile up, I've started recognizing what I have energy for. One day, I might only have the focus to start a background..so instead of just making one, I'll make 40 super quickly. Next time, I might only be able to lay down my composition, so I'll do that in batches as well. Etc. If anybody else is suffering from attention deficit, maybe you could also benefit from batch prepping. I'm actually finishing projects now, and it sounds so silly but it's super emotional for me lmfao. Thank you. ❤

I have to share a cool tip I saw: when roasting Roma tomatoes, cut the bottoms off so they stand, then roast as usual; when they come out of the oven, the skins will be super easy to pluck off and you don’t have to cut them in half ! And less pans 😊

You can blanch fruits and veggies in a pasta pot with a strainer insert, then pull the whole thing out and empty them into the ice bath. There aren't actually any approved recipes for diced tomatoes, but everyone does it.

My parents learned to can tomato puree on a trip to italy with roma tomatoes. After testing, we changed to a variety called ox heart (direct translation from portuguese) that had a bigger yield, most noticeable from the almost lack of water at the bottom of the jar. Anyway, that heirloom tomatoe is awfully close to our ox heart.

I’ve canned tomatoes here on KZbin a few years back, and listening to you I thought “ she sounds like me” 😂 I think I even said I enjoy the process and time in the kitchen while canning anything. I also dried the skins and turned them into powder. Tomato’s are so rewarding, and actually don’t need much process time. They are very acidic on their own but you can add a splash of lemon juice or vinegar to your jar then process for about 10 minutes. Some people don’t even process and just let the heat seal the lids ( cooked tomato’s sauce or diced of course). ❤

We spray guiness on our tomatoes and at the base of our plants to stop the slugs, keeps them alive, just deters from the plant and doesnt affect the taste :)

I freeze my tomatoes to peel them. And then I dice them & can them. I think it is a lot easier to freeze them rather then blanch them. Plus I can do them when I want to…when the tomato harvest is finished.

If I remember right, it was just hot packed tomato chunks and some fine dice green peppers and a Tablespoon of bottled lemon juice per jar. And then she looked up the canning times for tomotos and peppers and used whichever time was the longest. But I can't swear to it, so look her up if you get the chance.

Hey Becky, just wanted to share a trick that I often use when cooking - whenever I need to get a large amount of water boiling in a pot, I’ll use my electric kettle to speed up the process. Just heat up the water in the kettle and pour into the pot on the stove. It truly saves so much time (and gas too!)

Becky, I have been making a rotel recipe for several years and it is unbelievably close to the store bought brand. In The same Ball recipe book you have (The All new Ball book of canning) go to page 176 Salsa Ranchera. Make the recipe as stated but add 1/4 tsp Cumin, 1/4 tsp ground coriander, 1/4 tsp smoked paprika, 1/2 tsp Mexican oregano, 1 1/2 tsp of citric acid (if you do not use lime juice in the recipe) I have made many over the last 40 years and this truly is the best I have found. Hope you try it!

Combine your diced tomatoes, diced green chili’s (in the can. But I’ve also used poblanos) garlic and onions to make an amazing mild Rotel. I use it to add to velveeta to make amazing Queso (Chilie Con Queso). You can use shredded cheese instead of velveeta, but this is one of the times I suggest using velveeta lol. If you want a spicy Rotel, dice jalapeño instead of the mild chili or even half-and-half).

Becky instead of slicing tops off romas you can use your strawberry corer and just make X on bottom of tomatoes. Skin slides right off and no loss of extra tomato tops

Same here with my diced last year didn't do quite enough, so I have a full case as of right now and hope to get another. I just blanch, peel, dice and put them in a pot to just cook a little of the air out of them, then can them up in pints water bathing for 35 minutes according to my old chart I've went by for over 30 years. I have acid test strips and all my tomatoes tested very high in acid so I don't add anything to them you season when using them. 2 years ago, we grew jalapenos and it turned off so hot and dry and let me tell you girl they were hell fire in your mouth, my hubs Loves pretty hot stuff and they were to hot for him, the key to getting hot peppers is to not water them a lot and grow during the hot time of the year.

Yes, I could probably not be able to do the hot sauce because I would cough incessantly! I usually just can whole tomatoes. If I need pieces, I squeeze them between my fingers and dump them in the recipe. Other than that I pulse them with peppers and cilantro for hot sauce or other recipes. I plan to can tomatoes and chilis next year. I will just mix the two together and then pressure canner them the same as I do my tomatoes and that will make them safe without adding any type of acid.

I made the Roasted tomato, garlic, onion Marina sauce. My first batch was 10 lbs tomatoes, I used sweet Mayan onions from Walmart, grown in PA, organic garlic...I simply washed the tomatoes, all varieties, cut them in half, put them in a large ceramic lined cast iron dutch oven pot. They all fit...Drizzled on oil, salt and pepper. Roasted them for 1 hr on 450 in my oven one pan no mess. Took the huge pot out when they were done roasting, slipped off the skins. I used the same large pan to cook it all and blend in. I roasted my onions and garlic drizzle with oil, sprinkled salt and black pepper, in a separate high sided pan lined with parchment. Threw those in the tomato mixture. I have a huge oven both fit same temp and time. Pulled it all out.. Blended, it up with an immersion blender, added the other seasonings. One and done BAM into the hot jars for processing. It turned out fantastic. So this can be done easier and on a smaller scale. Thanks for the idea...

Dede’s “Rotel” Style Canned Tomatoes Dede’s “Rotel” Style Canned Tomatoes came up with this recipe in September 2009 and it’s a true keeper! I have used it for chili among other things. Soooo good! Yield: 11 pints Ingredients 4 quarts peeled tomatoes in petite dice (measure after dicing) - about 12.5 lbs. tomatoes 2 ounces diced green chilies (canned) 1 cup diced bell pepper (I used orange/red) 3/8 cup finely diced jalapeno peppers (approx. 3 huge or 6 regular - used a food processor) 1/2 cup sliced green onion (including some green tops) 1/2 tablespoon granulated garlic 1 tablespoon salt 1/8 cup lime juice 1/2 cup lemon juice 3/8 cup sugar 1 tablespoon calcium chloride (to firm tomato pieces) ~optional but worth it! Directions Mix all together. Bring to a boil. Reduce heat to simmer. Ladle into hot pints or smaller jars. Process in boiling water bath for 40 minutes. This is a safe recipe from my safe canning group.

According to the usda guide plain peppers need to be pressure canned because they are low acid. Pickled peppers can be water bath because of the acid in the vinegar. Rotel isnt acidic so adding vinegar or lemon juice or citric acid will give a different tasting end product. The only way to can homemade rotel would be to pressure can it for plain pepper time, but this is untested. The final result will not have as much texture as store rotel because of the long processing time.

You really do only make the mistake of cutting hot peppers without gloves once. I always thought "well I'm going to wash my hands well, and I won't touch my eyes", but ooooh I was a naive fool 😅 I cut up a bunch of jalapenos, washed my hands really well, and about 30 minutes later my one hand was on FIRE. I tried all the tricks to get it to stop, but nothing worked, and all I could do was go to bed with an ice pack on it and hope it was done burning by morning. It was, thankfully, but OUCH. I will never underestimate capsaicin again

The key to peppers is “sweat”. If you pay attention to your hands when in water, your body draws in your water ( finger raisins). But if you go outside and work in dirt and let your hands “sweat” your body pushes water out. Fun fact😊

Hi Becky. Watching you can your tomatoes made me want to tell you I’m a first time first year canner. I grew tomatoes jalapeños onions and I bought some cilantro and lime juice. I looked for a recipe for pico and made it. I then took it and canned it in 8 oz jars and I canned 12 jars. We are addicted to it! My husband LOVED IT. Sooo I have tons of jalapeños but my tomatoes aren’t producing now. But I’m gonna make more with purchased tomatoes and cilantro. I wish you’d try this recipe on your channel. I used approximately 30ish tomatoes of every size I grew. Two bunches fresh cilantro two medium onions about 10 large jalapeños and about 1/2 c lime juice and salt to taste (I think I added about two tbsp but once I opened it it needed a little more salt: a preference thing). I diced it all up small and then cooked it down till everything was at a boil the. Simmered it for an additional 3 minutes then I immediately jarred it. Then I waterbathed it for 15 minutes. Once done I set them out and let them “ping”. 😅 This pico/salsa is the best I’ve ever eaten! It is restaurant quality I kid you not! Think about trying it I promise you won’t be disappointed if you guys enjoy salsa/pico as a dip or just a taco topper. God bless y’all! Leslie-Florence Alabama

No longer than one minute for the blanching. Remember they will continue to cook even when you put them in the cold water. They cannot lose their heat instantly. My grandmother used to say 45 seconds to one minute. No more. Fantastic work you’re doing. Thank you.😊

You made my heart jump. Is that a Le Creuset pan in the dishwasher? Although it is dishwasher safe, Le Creuset does not recommend it. The soap is too harsh and can weaken the enamel leading to cracks and chips. At the current price $700+ for a dutch oven, it is worth the loving handwash.

Becky I mentioned in another one of your videos about your slug problem. Get a cheap can of beer pour it in a very little trough like use a solo cup or something like that and cut it down really low so that the slugs can get into it they'll go for the beer and leave your tomatoes alone . Put a couple of them around your tomato plants.

9:48 The recipe says tomatoes should be halved, quartered or left whole, as desired. It does NOT include diced. My understanding is that density could be an issue with diced tomatoes meaning the center contents might not reach the proper temperature.

There is a way to can diced tomatoes, suggested my a university extension office. It is to follow the crushed tomatoes recipe, crushing 1/6th of the tomatoes into loose juicy pulp, then they say you can leave the rest quartered or diced it doesn’t matter, but that the dices will fall apart more than quartered

I commented last year that diced tomatoes are not safe to can. I have the same book and it does not say dice l, it says desired. A Ball Canning Group has also said that diced tomatoes are not a safe way to can, only crushed.

Diced tomatoes have a smaller surface area and will heat more thoroughly than a whole tomato, how on earth can a smaller piece of tomato be less safe than an entire tomato? Absurd. Her kitchen, her rules, the alphabet “experts” say anything they have not tested is unsafe, because they want that control over you. There can absolutely not be a density issue with a smaller piece than with a larger one

Becky, I bought a Harvest brand multi use canner. It's stainless steel which i prefer over aluminum. It functions as a water bath OR a steam canner, and can be used as a basic stock pot. I have a glass top electric stove which does not recommend canning on it. But because of lower water amount the steam canning function uses, I feel comfortable using it on my stove top. And it's must easier to handle of course.

I have canned tinaties in their juice for years ,add,salt,sugar and garlic cloves, I have never added lemon juice ,and water bath for about 45 mins no issues as long as they are packed tight

The advantage to packing your tomatoes hot is you don't get so much separation between the juice and the tomatoes, but they don't taste any different.

Slugs - always in Minnesota. I put crushed egg shells around my tomatoes. Provides extra minerals in the roots and keeps those pesky slugs out. As for Rotel - I soooooo wanted to can Anaheim chilies (the ones used in rotel) and due to their lack of acid it just cannot be done. So your idea about just adding the “green chilies” to your canned diced tomatoes is genius!!!

I've started skinning, seeding, and then freeze drying my tomatoes for any use i choose, including thickening.

i think y'all would love ohsheglows' roasted tomato, garlic, & onion coconut soup. takes a little while for the veggies to roast, but totally worth it, and *goodness* but the garam masala is a great addition to tomato soup. also! capsaicin is fat-soluble, so i take it off with rubbing alcohol to make sure i get rid of it, tho i usually use gloves too. remember that capsaicin is caustic, so if you don't get it off fast enough, you'll give yourself chemical burns!

My grandmother also took a pairing knife and made a little x on the bottom of the tomatoes before blanching and it made peeling a piece of cake.

Becky, contrary to what we learned in school (and with borrowed books), it's okay to write in our books. Write the 0:40, 1:25, and other number in each of those columns, so you don't have to "read" the time for each. I do that in books, on packages, etc. That way, I only have to read it one time. And if you really don't want to write in them, use a sticky note. :)

You can also use tomato powder to make tomato paste/sauce in recipes that call for it without wasting a can or having to come up with another recipe to use up a can, if a recipe calls for a couple table spoons.

Hey Becky. Been watching you for years now. Glad to see you thriving. Just something that might help with the skin peeling labour, I came across a vid that may help with it. There is a vid from Homegrown Homegathered where they recently showed a tip for getting rid of the skins via using the broil setting in your oven. I might be using that for my upcoming relish season (good gift giving). I hope it may help with both cleaning and time saving. And let me know if you want a tomato and onion relish recipe. Happy to give you one (it includes some chillis)

I did the same thing. I picked one of my Hungarian hot wax peppers with no gloves. I washed my hands after several times. Later on I rubbed my eyes forgetting about the peppers and not really thinking it would be a problem. Boy was I wrong. Luckily it wasn’t as bad as it could have been, but sure did teach me to wear gloves next time!
