In activities If I use Obj-open i don't know how many(like 10) records are there if I use obj-open will obj-open will it fetch all the 10 records or It will fetch a single record?

In a single instance you can fetch all the records, where as OBJ-Browse you can fetch multiple records from different tables

Why do PEGA recommend use DT instead of Activites .?

Pega always recommends use other rules than activities, the purpose of DT for data manipulations, we should not use activities for calculations or property validations we can implement as constraints rules or Declare Expression rules. Use of a declarative rule (rather than an activity) eliminates the need to control how and when an activity executes. A best practice is to use declarative processing rather than activities when feasible.
