Have you ever heard of burnt ends? They are a typical American barbecue preparation: delicious bacon cubes smoked and cooked at low temperatures, covered with an irresistible spicy and sweet glaze. Try them and let us know how they turned out!
Ingredients:
3kg of bacon (without rind, if possible have it squared so as to have a rectangle)
butter
Brown sugar
honey
bbq sauce (or to taste)
For the rub:
sweet and spicy paprika
garlic powder
onion powder
Origan
salt
pepper
Method.
Light the barbecue and bring it to a temperature of 120-130 degrees.
Remove the bacon from the fridge (so that it is firm enough to work with) and first cut into strips and then into 3/4 inch cubes per side.
Mix all the spices and sprinkle each cube well.
Place the cubes on a grill (not too close together) and insert them into the barbecue. If you have it, place a piece of cherry wood on the embers for smoking.
Proceed with this first (indirect) cooking phase for approximately 2 hours / 2 and a half hours, until a dark and crunchy crust (bark) has been created on the surface of the cubes.
Then remove the cubes from the BBQ (without turning it off) and place them in a pan with a few pieces of butter, a good dose of brown sugar, honey and the BBQ sauce. Mix everything so that the cubes are all sprinkled.
Cover the pan with aluminum foil so that no air enters and put it back in the oven for the last hour, always at 120-130 degrees.
Once finished, remove and mix inside the pan to keep the cubes nice and wet.
To see if you've done a good job, take a cube and try crushing it with your fingers. If it crushes easily, you're good.
