@ejapor3497

I’m Filipino-American and admittedly I’m more OG and a Traditionalist when it comes to Filipino Food! I’m not going to say that the Filipino Dishes should’ve been better then the Quail and Waffles because I didn’t taste the dish! But being that I’m from the US where Chicken Waffles is more Commonplace and admired, I can appreciate Mary’s elevation of this Dish! Being a Filipino Home Cook I can be more critical of the two Filipino Dishes! Both the Adobe and the Kare Kare needed to be wet and be served with some traditional style rice but Elevated! The Adobe could easily been cooked with Chicken or Pork and braised in the traditional Adobe braising liquid, with Adobe it’s all about the sauce or sabow! Getting a Chicken with some nice skin, you can cut the skin and fry the skin you have Chicken Chicharon which you can incorporate into a Garlic Fried Rice! And the Kare Kare some mentioned lack of bagoong or shrimp paste, but also where is the Tripe? The Kare Kare should have been left more as a Stew then how it was presented and it should’ve been presented with Bagoong Fried Rice if you don’t want to overwhelm with the strong taste! That’s the problem with the so called New Modern Filipino or Fusion style it strays sometimes too much from the original! Mary cooking her version of Chicken and Waffles may have seemed to play it safe but she selected a dish that would’ve been hard to mess up! There is such a thing as being to ambitious like Veronica with her Brisket!

Kare Kare, is no5 suppose to be spicy, but more peanutty and don't forget, krill paste for saltiness, why would another Asian, it will be great to be spicy, As a filipino cook, don't change the menu, you take the essences of the dish,

I think Matthew is the only Filipino there because he was born and raised in Makati by both Filipino parents. The other guy may have Filipino parents but he was born in Canada, he's practically local/native there. As a Filipino, I got curious and looked them up.

People has to understand that the judges are professional not just bystanders claiming to be one. They've got judges who owns their own branches with respectable reputation and the world of food doesn't just revolve around how complex it is or how savoury a dish is, sometimes they rate how simple yet different it is.

that's a very close elimination. Mathew at the first dish lacks a bit salt and at his second dish is the uneven cut and salt once again . On the other hand, Veronica's first dish lacks salt but too much pepper. As for her 2nd dish, the cuts aren't as pretty but is delicious. For her third dish, the potato portion seems a bit too much. its a -3 points for Mathew and -4 for Veronica

Everyone here is attacking marry but noone talks about how mary made a dessert out of hot peppers and tomatos in the last episode. Making a waffle is basic. But with the ingredients u use to elevate it, techniques u use to make it seperates it from being a day today morning waffle. And dint u hear she made something with spinach to eat with waffles. Do u know how to match those two types of foods?😂 . Obviously not. And jeremy and Mathew always mentioned that their biggest competition is Marry. Didnt It say that Marry is talented?I know mathew and Jeremy are very talented cooks with great determination. They all have won their lives including Mary. So dont spread this much of hate about someones talent. Get a grip🙂
