Good video👍 It looks like you got pretty good plan. Yesterday I mentioned a conduit bender. Today I going to suggest using a electrician's knockout holesaw for that hole to swallow that bolt head. The better ones like "Ideal's" have carbide tipped teeth. Even with that Ryobi drill, you should have no problem cutting a 7/8" or 1-1/8" hole in that extension plate.
