Is it just me or does the Roaring Rapids look like it keeps guests pretty dry? The waterways look really narrow and don't let the rafts bounce around and the main drop at 1:07 has a "buffer zone" so rafts don't splash at all.

Hello! Just tried the ride today in Shanghai :) What I found was that it keeps your upper body pretty dry, but your lower body gets pretty soaked

Rides look similar to Grizzly River Run and Soarin in Disney's California Adventure.

Soarin is changing to soarin over the world in all Disney parks. So regardless they will all give the same experience.
