In S FL, the dry brown leaves are burnt off by large controlled fires, and the harvesters come through and harvest what’s left. I’ve never seen it done this way. *Edit, I now realize this was cut for seed for a new crop, but not understanding where the cane itself went.

Watching this as an outsider having never worked around sugarcane,I cant help but think that there has to be a faster way to get the cane off the ground and into a wagon of some sort.

This the the old way of planting. Many farms are switching to billet planting, which is planting the copped cane. The cutter looks like the big robot from the first Thor movie. it's funny you can tell the picker cab is off a 8820 combine but they use the engine side maintenance small door as the main door on this piker

Why are they not harvesting the cane? Or has the “sugar” been harvested and this is just what left, to replant?

No this is for planting, harvest will begin at the end of the month. New sugarcane stalks grow from the ringed joints on the cane stalk. So they plant the stalks in the ground.
