Its 11pm. I just got a premade starter from someone and now this has motivated me to start my own starter from scratch! Now all I need is a bread recipe!

I grew up in California where we learned about the miners from the gold rush keeping sourdough starter in their socks so they could make bread. I can't believe they would baby it as much as people say to. can you even imagine, "hold on Carl I gotta stop panning for gold and make sure it's not to hot for my sourdough!"

When you dumped the bowl.....that translucent stretchy...I think that qualifies for window paning.,, It stayed together and you could "see through" it. Or that's my story. I like my dough a little sticky (I call it slack) as I think you not likely to have a dry loaf (over flouring). Hermina cold raised overnight and I shaped her into loaves this morning. Her two spawn are raising right now. I did double read Lisa Boone's recipe...this dough doesn't have a stretch and fold cycle. Damn sounds like a washing machine...but wouldn't it be great if there was fold cycle on a washing machine! For the record, I'm doing Boone's potato sourdough which is a little sweeter for sandwich bread. Sourdough is definitely a discipline with all the proofing cycles. My starter was nearly proofed the night before last, but the timing was all wrong so into the fridge it went. Pulled it out the next morning and proofed for a couple of hours...then kept going. Hermina definitely is a champion and rose to the occasion. :)
