Next time you need to use cold butter, I find it so much easier to grab one from the freezer and grate it up. Jane is doing great and so are you!

I’ve been an avid baker for over 60 years, and have never weighed my ingredients! I hear that is best though, so look forward to seeing what you think about it…😉❤️ P. S. I think also that sourdough is supposed to be good for you, and those look AMAZING! (I love them cakey!☺️)

I think adding the dry to the butter is called reverse cream method and that it's supposed to produce a stronger cookie because it has less air in it (than one where the butter and sugar are well combined first).

You can zero out your scale before each addition....if that helps.

😂 you took the words right out of my mouth, Jessica when you put your bowl zero it out, then add flour then zero out then your next ingredient and zero it out this way you aren’t adding anything up and the measurements will be perfect…. Hope this helps you out ❤❤❤

The butter chunks feel wrong indeed. This must be an English or European recipe because of having to use a scale.
