Lemon pepper seasoning tends to be mostly salt. I counteract this with freshly crushed black pepper set on coarse. I do about 50% lemon pepper seasoning and 50% freshly cracked black pepper. I want to be punched in the nose with black pepper and lemon. If that ain't your thing, then lemon pepper wings ain't your thing. Also baking soda added to the flour gives an EXTRA crispy texture when baking the wings as created by Kenji Lopez Alt.
