There are multiple explanations. One of them is that the fever was too slow and too ineffective to make Clem turn, plus the bite was on the leg which was already losing blood, meaning the virus was slightly cleansing itself. There is also a reddit post by a mod explaining how AJ "protekted" Clem.

Actually once AJ cut her leg off she passed out from the pain. He used the flint clem was carrying and the hay to start a fire then put her knife on it to heat it up. He then pressed it to her leg to cauterize the wound. He then tied a rope around her leg to make sure no more blood leaves her body. He used the wheelbarrow and knife to kill every zombie that came up to the windows around him. It took a little while and yes he was extremely exhausted but his love for clem kept him going. Once he for sure knew all walkers were dead he heaved clem into the wheelbarrow and found the school where of course ruby helped clean and bandage the wound. Look it up. A producer of the game posted this because everyone wanted to know how this happend! AJ is badass!

In my opinion, I think it’s because of her immunity system. Sure, she and Lee cut off their limbs respectively later when it should’ve done earlier to stop it from spreading. But keep in mind, your immunity system dies down as you get older and older. Clem was still massively younger than Lee. He was 37 at the start of S1 and possibly 38 or so later, who knows? Clem is like 11 in S2 and possibly 14 or 15 in S3, Idk. So in S4, I’m estimating that she’s nearly 18 or so. Her immune system will still strong during that age. Edit: Not to mention, her leg was already bleeding. So the blood loss from her leg was slowing it down. Not to mention the bite was near her ankle. So the infection reaching her brain would’ve been longer alongside the blood loss. The infection spreads in the blood. So Clem had the time to cut off her leg.

Sadly, as stated in seasom 3 "you bought her a peaceful moment, nothing more" sadly Clem is still going to die. It was showcased in season 1 that amputating a body part usually dosent work, and if it somehow does (which its shown clem is pretty far gone by this point) the limb can become infected.

nah, she's fine most likely the cut she had was slowly draining it out and when AJ amputated that part of the leg the rest drained out. idk how he got her out of there but when they finally made it to the school they must've disinfected it thoroughly and just had one of those whatever happens happens moments. Clem was able to beat it. however, if for any reason a herd tries to get through or villains come to the school similar to the delta there's no way in hell she's surviving unless AJ puts walker blood on her fast enough and Louis if he's able to get to her carries her out of the place.

another thing i dont think it worked for Lee was because (plot) he waited to long and unlike Clementine who passed out and was on bed rest for who knows how long, Lee (if you decide to amputate his arm again plot) doesnt rest once he's done so either way he died of blood lost or the infection. Reggie in season 2 survived getting bit in the arm and most likely was given a chance to rest.
