For the best taste and extraction always use medium roast beans. Dark roast always result in bitter taste even when properly extracted. That is the reason you were getting better taste when you under extracted with lower pressure and fast flow.

Great video. It's easy to follow and duplicate these steps. My built-in grinder can't grind fine enough to get the desired pressure and extraction rate. I've ordered a better grinder and also had a local coffee shop grind 500g for me. More testing follows.

A couple more thoughts Aju: when dialling in the dose, I found it easier to release the coffee into an espresso cup which I'd previously tared, then remove any excess coffee before adding to the portafilter; I also tried consecutive dosing (weighing and taring each cup before dosing). The automatic grind amount was remarkably consistent so I'm less bothered about single dosing.. I guess the next step is to add a separate grinder to the mix and see how much better the coffee tastes. Everyone is raving about the NICHE grinder..but of course it costs as much as the Barista Express in the first place so its not a small investment! 2nd shot 10 second pre-infusion + 12-13 second drop time = 22-23 second. The best way to get accurate pre-infusion is use a bottomless portafilter and watch as the bottom of basket begins to saturate. That is your pre-infusion. For those who say timing from pump turn on get pump start up time I say if it takes longer than a second for your pump to begin pre-infusion there's something wrong with your pump or something wrong with brew head your brew head.

If you're only timing from 1st drop what time are you trying to get? You should be aiming for between 17 to 20 seconds from 1st drop. Maybe a little more depending on the bean.

You can adjust your burr so you can achieve finer options and your fine option will move from 4 to 6. Just readjust your grinder burr.

@@gedionsamuel2256 Regarding soggy puck, i don't normally get. One tip is to ensure you tamp it right at Razor tool height. If you tamp it too low (lower than Razor height 7.5mm), you will get soggy puck. Also, try to leave your puck in Portafilter for 2bor 3 minutes after Extraction. Breville barista Express has a feature where it sucks up water from the puck to make it dry.

Hi Aju: I've watched several of your videos now (I live in London, UK by the way, and recently bought a Breville Barista same as yours!). I must say your videos are really helpful, specific and clear. I single dose 18g each time (rather than rely on the automatic dosing of the machine) but it would be interesting to see how effective and consistent automatic dosing actually is in a future video? One question: Dosing ratio. Its officially supposed to be around 1:2 but your was quite a lot higher. Any thoughts on that and any plans to make video about dosing ratios and dialling in? Thanks !! I believe you are supposed to start the timer at the press of the button. So with your machine it’s starting to pour out the machine at the 10th second. So your last shot ended at 20 seconds but in reality you hit the perfect 30 second mark. (Just my thoughts..?)

Love your videos, you're great at explaining things and share very valuable knowledge. What I can't understand is how you are achieving correct (in the zone) pressure regardless of whether you are at grind size 6 or move all the way down to 2. If I am at the 12 o'clock range and move 1 or 2 grind sizes finer I will definitely be over extracted out of the range. Changing grind sizes seems a lot more sensetive for me. I am using super market medium roast beans and have internal burr on setting 3. Thoughts?

David, thank you. Good question though. Answer is simple why I get good extraction and in pressure range is because I use freshly roasted beans. Freshly roasted is much different than store bought beans where we don't know the roasted date. For espresso always buy from a local roaster as they give you the roasted date. Now in 1:37 of this video I mentioned that I roasted this beans 2 days ago. So lot of coffee oils and gas in that beans, so you see good extraction like honey. I have few videos in my channel on how to roast beans at home.

My Breville BE 870 came with a levelling tool. Unfortunately the grinder stopped working, not the grinder itself but its activating switch became unpredictable, sometimes it worked, sometimes it did not want to start. I bought Breville smart burr grinder which I love. It has the same type of activation, but this is doubled by Start/Pause button. Somewhere in the middle I pause the grinding, press down the coffee, and in the end I use the provided tools to press it down. This smart grinder has digital timer and grind settings. Interestingly, I use grind size 6 for my own roasted beens . For those beans, size 4 is just slow and over extracted. I love Lavazza but I generally use Gran Crema or something similar. How did Lavazza Rossa work compared to your own roasted beans? And my last question: how do you roast raw coffee beans? I only tried the stove roasting in a cast iron pan. What I don't like is blowing away the fluffy bran.

Lavazza Rosa is decent tasting espresso. I prefer Roasting my own. But to compare there are many types of beans that i roast. This Lavazza is better tasting than some of the flavors i roasted. But i still prefer the freshness of roasting my own. I always use cast iron deep Skillet to roast my beans. @@rueda82nd oh i see. When you switch on Non-Pressurized basket you will need to dial in properly to see the pressure gauge in guided range. And it'll taste better too. Pressurized basket always shows pressure and it is not really hitting the sweet spot of the beans. Buy freshly Roasted beans and try.

I notice u have not changed your amount of grind and just adjusted the coarseness. Reason? Is there a reason for using the numbers u use on amount of ground coffee weight? Great video, thanks. One question - My 'Grind Amount' dial is always at 12, if I go any further I get LOTS of coffee and yet I see yours is at around 4pm. Any time I adjust the grind setting wheel as well it gives me more or less depending on which way I turn it, so I can nevert get a consistent amount unless I leave it one setting. Any ideas?

I leave it to Maximum because i don't use that dial. Instead i weigh my beans to 18g and use it one time. So i always get 18g out. That dial is not reliable and every time you change beans, it can dispense more or less depending on the beans quality.

Is it normal for the single and double shot to have different dial ins for the grind size? I found that if I use the grind setting that works for the double shot for the single shot, the single shot starts to choke and I have to make the grind setting 2 steps coarser for it to work for the single shot. For example, I use a grind setting of 8 for my double shot, but the single shot chokes unless I use a grind setting of 10. If I use the setting of 10 for my double shot, it reaches the middle of the espresso zone on the pressure gauge but the flow is a little too fast. This is for the breville barista express by the way. Both of the filter cups are also single wall (unpressurized). Also I am using Lavazza espresso perfetto whole bean blend.

After you've dialed in the grind size, i would suggest you to change only dose when you swap single or double basket. If the Pressure is too low on single, then dose 1g more and see. That's what i do. Single basket is not exactly half of double dose. Usually single ratio is slightly more. So dose 1g more and tamp well and see.

I used to dose 2 single dose, to avoid spill. In between I tap Portafilter to settle the Grinds before dosing 2nd half. This was before i bought a dosing cup. What is the Roasted date of the beans that you use? If you don't use freshly Roasted, you won't get a decent Extraction.

I use single wall double filter only. I use filter size on the machine to single, before I bought the dosing cup. this is to avoid spilling of grinds. So I do 2 single dose to make it double. And tap half way to settle the beans well before dosing the 2nd half. Hope that clarifies.

First thing please check if your filter baskets are clogged. Secondly run few double shot empty shots, just hot water and measure the water volume to see if you are getting it constant. Thirdly measure 18g of grinds (not beans). i.e. make sure you take 18g of ground coffee into the basket. Because Grinder can dose more OR less than 18g beans. if the above items are good, then it could be something to do with your beans and grinder. As you know Breville grinder is not consistent in grinding. i.e. some coarser, some very fine. Test it out and let me know.

After watching these vids I reset my machine and was struggling. I double checked the instructions that came with the Breville and extraction should be 2:1 ratio or 19g beans 38g espresso... Not the 50g of espresso you are extracting

You can manually stop the extraction at 1:2 ratio. Auto setting in Breville is not reliable

What’s your burr setting inside?? Setting 5 for me inside and grind 4 and get needle at 12 I think it’s good ☕️👍🏼 Alan H

@@alanh8101 thank you for Subscribing. I appreciate that. To get lot of crema with a coarser beans, its simple! . Buy freshly Roasted beans from a local roaster OR roast your own! It must be less than 2 weeks old dial in and let me know if you get lot of crema. I have few videos on Roasting your own beans.

Alan/Aju - how do you know what setting to adjust the internal burr set to? I’m struggling to dial my machine in. It’s way too quick on the flow but I can’t seem to grind fine enough unless it’s choking the machine and cuts out. Any advice?

Just out of curiosity, how do you know where to set the grind amount? In every video I watch, I seem to see a different location of the dial. Some around "three o'clock" all the way down to "six o'clock." Any guidance available?

I use weighing scale to weigh beans - 18g from double shot and put the dosing dial to maximum to get all 18g grinds into a dosing cup in one go. Depending on dosing dial is not reliable as it can change according to the beans too.

I feel like the distributor is useless because it doesn't reach down into basket it only distributes the top. I prefer to use a WDT tool it looks like 3 prong whisk.

You need to tap the Portafilter to settle the grinds well, before using distribution tool. It is one of the best tool and must buy tool.

I notice that my tamper can be adjusted. What is the lengthier of your tamper? The side that is not the leveler.

Razor height is 7.5mm. But I recommend 8mm as Grinds can expand a bit after tamping using 2 in 1 tool.

@@davidmaisonneuve6815 Razor is fixed height 7.5mm. 2 in 1 tamper height can be adjusted. So i recommend to adjust 8mm in 2 in 1 tamper. This is Breville recommend height for grinds after tamping. Not sure what other KZbinr mentioned.

Thank you for replying! I was also wondering why we’re not pulling a full 2 ounce shot ? Is it because the size of the portafilter does not allow for a higher amount of coffee ?

@@davidmaisonneuve6815 2 Oz is your choice. By default BBE can give around that volume. Usually lesser than 2 Oz. To get 2 Oz you need to do Manual Extraction. You need to use a different grinder, found this grinder too fiddly when changing coffee beans and types and the coffee retention is shocking

You start timing when you start the shot (extraction) not at first drop.

I've seen people time it both ways but it should be when the first drop is "extracted". If you start the timer at the button press, you're timing the pump, preinfusion, etc. not just the actual extraction.

It's been a debate always 🙂. Due to long/slow preinfusion on BBE (8-12sec), i tend to start at 1st drop. Anyway this is not a big deal, as far as its not a very long shot and watch for the change of color.

@@AjusCafe Yes the problem with timing from first drop is you don't factor in pre-infusion and coffee puck saturation, which effects the flow rate. But your right, it doesn't really matter as long as you stick to one method and then adjust from there...and of course, that it taste good to you! Enjoy :)
