Nice trap, Black should play 3.Nf6 or Bc5 because they are main lines. 3.d6 and Bg4 is kind of dubious and not that sound for black. White can punish this as you explained

There are thousands of chess openings and every opening have different main lines. There is nothing wrong with the move d6 and Bg4. The main mistake move in this scenario was Bh5 and then the blunder move that black made was Bxe1 which lead to its collapse.
