Looks good. Those thin slices of Jalapeno are called julienned. To dice an onion easily cut in half and lay the half flat, then make half circle slices but don't cut it all the way to one of the edges. Then cut 90 digress to those slices. Some things I like to do are throw some tomato and onion in my Guac. For another flavor dynamic bring the Traeger up to 500+ and sear the pineapple like you were cooking it like a steak. One last trick I like, Marinate the pork chop in some soy sauce for an hour or two before throwing it on the Traeger.

Tip for picking a ripe pineapple: find the leaf that is closest to the center and pull it out. If it comes out easily it is ripe.

Love ya Tim, but....lol I hate to be “that guy” but my wife is Mexican from Jalisco and al pastor is marinated in what’s called “Achiote” paste. With oregano, vinegar, pineapple juice for several hours. To give that dark red color. And yes typically topped with pineapple chunks, onion,cilantro, and some salsa verde. Looks great tho.
