Do you have a newly recommended thermocouple and digital thermometer? Looks like it's not easy to find the MS6500 right now nor do you sell it, and the link for the Omega thermocouple is also dead.

Any Type K, ungrouded, 1/8" thermocouple will work. Likewise, any thermometer that accepts a Type K thermocouple will work.

Thanks. 20 years in the shop, the right tools and LOTS of failures will do that :) Just take your time and follow what I did and you may find it isn't so hard.

I just did this and was slightly off center. There is a small opening on one side of the slot where the drum end gets narrow, but it seems to still work fine. I've been over roasting my beans (they've been roasting very quick for whatever reason) so for minimal work effort it was worth it to try this.

This looks like a very cool project and I am definitely going to dive in. I have a question: I see the probe inside the drum and it is right in the middle of the inside of it. When I watch my beans in my roaster they are pretty much roasting at the bottom of it as it is turning. Does the probe actually make contact with the beans?

It does if you use 2-2.5 lb.

For clarity, the thermocouple modification is only meant to be useful for cocoa where you can and actually need to roast double the amount you would roast for coffee since cocoa roasts so much cooler. If you are talking about cocoa, then you should not be roasting only 1 lb. Does that clarify?

Yes, the only difference in models is the programming and circuit board updates.

it is pretty hard by hand. The stainless isn't a fan of hand drilling. It is easy to snag and snap the bit. Regardless, use lots of cutting oil.

Internal chamber tempering is no help at all to know what is inside the drum and what temperature the beans are if that is what you are saying.

So if you pre-heat you can go to the same temperature. They also take pains to say it is not to be used to actually roast by.

No, not at all. With 2 lbs the probe is inside the bean mass.

The point is that when you roast 2 lb of cocoa, the thermocouple is no longer in the environment, it is in the bean mass.
