I like that you take the time to hand sand, dye, burnish and wax the sole and heel edges, rather than just painting them with edge dressing. I do mine the same way (just as a hobbyist, not a professional), and even though it's more work, the finished product is way better.

Yes, you're correct. It helps prevent the metal from rubbing on the leather.
