Dear Jessica - Wow it’s gonna be an interesting vlog . In fact last evening we made Pani Puri at home and we just loved it 😋 I love the background music. Whoever is behind the camera and editing your vlogs is a fabulous person and total kudos to the person 👏🏼👏🏼 We use hot chick peas or Chole with the chutneys and tamarind , mint coriander, ginger , green chilli water . I believe you are doing the North Indian way Mashed potatoes with spices and boiled Channa . That’s also good . Wow you are going to make the sweet date / tamarind chutney from scratch 👏🏼👏🏼 So sweet the owner and the customers helped you not only with selection of the ingredients but also some tips for making the Pani Puri . Yes you are right it’s called Gol Gappa 👍 That’s a pro tip by the customer 👌 Love the way you are systematically following the recipe while making the “Pani” 👏🏼👏🏼 The Puri shape and fluff is perfect 👍 In fact we got ready made Puris unlike you making it yourself so kudos to you 👌 You could add some Pink Himalayan salt while adding spices to the the mashed Potatoes and Chickpeas . That would amp up the flavour of the other spices . Wow they look spectacular. Yes we motivate you but it’s your passion for Indian food and cooking which makes it a fabulous viewing experience 👌👌 That’s a delectable Pani Puri with an explosion of flavours 😋😋 I am sure you have more of the chutney and Pani looking at the massive number of Puris and the mashed potatoes . Who we could hear the ASMR crunch all the way in India 🇮🇳😀😀 Looks like I could just dive into my TV set and have a some Pani Puris . The colour of the Puri is perfect. The mashed potatoes should be spicy . Now it’s time for the pro dessert tasting expert Alfonso 😀 Jalebi is available all over India . It’s drenched in sugar syrup and hence the overload of sweetness. Colour is perfect!! ... You can make DHAHI PURI by replacing mint water / green water with yogurt / curd and top with some sev. Sev is another amazing thing which goes perfectly with Dhai puri

For those who dont know Pani Puri is an excellent appetite booster. Those who have lost their appetite and taste in food after an illness, have some pani puri especially with warm "pani". Kudos to you Jessica 👏 making everything from scratch. The chutney is the toughest, getting the ingredients the right amount. Most of us buy it ready made. For the filling, you can try a variation-- sprouted whole mung lentil, mix it with mashed potatoes spiced lightly with chat masala. 😋

Jalebi is a sweet enjoyed all over India. A variation of Jalebi called Jangri is made only in South India in the state of Tamilnad. Jangri looks exactly like Jalebi, but is more spongy and less crispy, dark orange, and tastes even sweeter than Jalebi does. Jalebi and/or Jangri are staples at Indian weddings. You wanted suggestions on other Indian sweets to try - try Burfi, Rasgolla, Gulab Jamun, Basundi, Mysore Pak etc. All of these should be available pre-packaged at any decent Indian store.

You did an amazing job on Panipuri Jalebi is popular in india it originated in Gujarat it's like a snack item you can find jalebi made from sugar syrup and batter made from maida everywhere but in nashik at sadhana misal point you will find jalebi made from Jaggery syrup and if you go to Budha Halwai it is famous for their sweets and for Jalebi made from potatoes not from maida and budha Halwai is also famous for their savoury snack items

@Jessica: I must say you are a pro. How you made it is the same way how it is made in most of the state of India. You just made it in a very pro style and 100 % up to the mark. Yes Jalebi is a very popular sweet dish. It is a north Indian sweet dish. A delicacy of Madhya pradesh state of India. Usually in Madhya pradesh state it is had as a break fast desert along with Poha (flattened rice). So it is like if you walk into the streets of any city of Madhya Pradesh you will see many stalls selling hot and fresh Jalebi and Poha for breakfast. Jalebi is made from all purpose flour. You can easily get its recipe from youtube. Cheers !!

Oh my god!! hats off to you for daring to make pani puri. I never dared to make it at home because let me tell you..pani puri is an emotion for me and if I dont get it perfect, it just ruins the mood 😆. Making pani is not difficult but making perfect pani ( just like we get it on streets stalls) is a task. So I never try it at home. This is a pani puri with aloo ( patato). In summer, you will get cold 'pani 'with potato filling. The 'chana' is a small black chana, not these ones. The mashed potato and whole grains of chana gives a different feeling while eating. During winters, we cant have cold pani puri, so there we can get a 'ragada' ( white peas cooked with little salt and turmeric) puri. This ragada is hot..The stall owner will add ragada instead on potato filling and rest of the thing will be the same. Golgappa, pani puri, puchka are the different names for pani puri in various states of india. Lastly, while writing this , my son is at school and Alphanso is making me miss my son. 😄 God bless your little superstar.
