Jessica, Alfonso Sr and Alfonso Jr. Thank you for coming back to India. During your last visit to Mumbai , I was very happy you have come to India and Mumbai. However if you both recall, I had expressed disappointment of some of the choices you were inadvertently taken to by circumstances. I always like your statement we want to have authentic Indian food. When you come to India and if you came all the way for authentic Indian dishes, focus on authentic local Indian dishes , and not so much on Indo-European or Indo-Chinese mix matches or North Indian dishes in Western or Southern India, South Indian dishes in Western India or Mumbai, or Delhi Punjabi food in Eastern India, or Bengali dishes in South India. Unfortunately during your last visit to India, especially in Mumbai you savoured North Indian and South Indian dishes while totally missing out local Maharashtrian dishes from Maharashtra and parts or Maharashtra like Malvan, Kokan, Kolhapur, Pune, Nagpur, local Mumbai, Vidarbha- All regions of Maharashtra- have their own blends or textures of Western India Maharashtrian cuisine. You should not stick to South Mumbai or Juhu side of Mumbai. Go to Central Mumbai for traditional Maharashtrian cuisine in restaurants in Dadar such as Prakash at Dadar East, Aswaad at Shivaji Park, Dadar East, Mama Kane at Dadar Station East, For traditional Maharashtrian vegetarian dishes from all parts of Maharashtra ( Kokan, Kolhapur, Marathwada, Vidarbha, Pune ) visit Metkut restaurant at Ghantali, Thane East . For traditional Maharashtrian Non Vegetarian food visit Thane ( just north suburb of Mumbai) , Malvan restaurant at Panchpakhadi Thane East, Authentic Maharashtrian sea food and chicken dishes of Malvani cuisine, Agri cuisine and Koli cuisine is available at the above mentioned Malvan restaurant. Or you can visit Gomantak restaurant at Dadar West, next to Plaza Movie theater. So when you go to different parts of India taste the cuisine of that place. You have certainly tried cuisine of various parts of India already in the US, in Canada, and in New Delhi and Mumbai. But it makes less sense to taste South Indian food, such as Dosa, Sadhya lunch in New Delhi and Mumbai when you have already planned a visit to South India, and vice versa. Have south Indian food in South India, Bengali food in Bengal, North Indian food in New Delhi and Maharashtra authentic cuisine in Maharashtra. Authentic Maharashtra cuisine is available in select authentic exclusive Maharashtrian restaurants serving authentic original Maharashtrian dishes. Hope you will consider my suggestion. I will share the Mumbai restaurant links separately . Thank you . Wish you all the best and have a great tour of India.

If you go to bengaluru, I have one recommendation for you as a north Indian living in bengaluru for the last 14 years since college. Try to visit AL Amanah cafe in Kamanahalli. You won't be disappointed. That place fed me and hundreds others for 5 years of law school. From a small shop to a fancy resto-cafe, we have seen it transition. These days you have to stand in a queau for atleast half an hour to get your wrap but it is still totally worth it. I love this place like no other eatery, so does everyone else who has ever tasted their fresh made wraps and rolls. Extremely cost efficient, nutritious and tasty. 80 rupees for a tummy full of food. Do try it if you make it to bengaluru. Who knows, I might meet you all there.

Persian influence on Indian food is a fascinating subject, stemming from centuries of cultural and culinary exchange. This influence is particularly prominent in the Mughal era, when Persian traditions blended with Indian flavors to create iconic dishes that are still beloved today. Here are key ways Persia influenced Indian cuisine: ### 1. *Introduction of Ingredients* - **Dry Fruits and Nuts**: Almonds, pistachios, and raisins became staples in Indian cooking, especially in sweets and biryanis. - **Saffron**: This expensive spice, a hallmark of Persian cooking, was introduced to Indian dishes like pulao and desserts. - **Rose Water and Kewra Water**: Used for their aromatic qualities, these are integral to Indian desserts such as gulab jamun and rasmalai. ### 2. *Cooking Techniques* - **Dum Cooking**: The Persian technique of slow-cooking food in sealed pots (called "dum pukht") was adopted and perfected in India, leading to dishes like dum biryani. - **Charcoal Grilling**: Kebabs, popular in Persian cuisine, were adapted into Indian styles like seekh kebabs and tandoori dishes. ### 3. *Introduction of Dishes* - **Biryani and Pulao**: These iconic rice dishes have Persian origins, adapted to include Indian spices and ingredients. - **Kebabs**: Persian kebabs evolved into a variety of Indian kebabs, with regional variations. - **Nihari and Haleem**: Slow-cooked meat stews are influenced by Persian recipes but enriched with Indian spices. ### 4. *Flavor Profiles* - **Mild and Aromatic**: Persian food tends to be less spicy and more aromatic. This balance influenced the Mughal cuisine, which incorporated rich, creamy gravies and fragrant spices. - **Sweet and Savory Combinations**: The Persian love for combining sweet and savory flavors (like in their stews and pilafs) influenced Indian dishes like shahi korma and Mughlai curries. ### 5. *Desserts* - Many Indian desserts like firni (rice pudding) and shahi tukda (bread pudding) draw inspiration from Persian sweets. - Use of sugar, rose water, and saffron in desserts reflects Persian culinary traditions. ### 6. *Culinary Aesthetics* - Persian cuisine emphasizes presentation and opulence, which influenced Indian royal cuisine, especially during the Mughal era. This fusion of Persian and Indian culinary traditions has enriched the Indian food landscape, giving rise to a unique and enduring heritage of flavors and techniques.
