For Raita, Cucumber probably have to be more smaller in pieces...you don't have to chew much..that kind of refined... But I have seen in the restaurant in western countries they slices cucumber coarse pieces...

As far as the RAITA goes you could also make a 'Mixed Raita' mixing in the Yoghurt chopped onions, green peppers / jalapenos, tomatoes and cucumber garnished with coriander / cilantro. Alternatively you can also make a simple 'Potato Raita' with diced boiled potatoes, green chillies / jalapenos, coriander / cilantro etc.... Else a sweet 'Fruit Raita' with chopped fruits (i.e. bananas, mangoes, apples, straw berries, blue berries or any other fruit available that you like) in Yoghurt blended with sugar .... Remember Vinegar is normally added out at the fag end when a dish is nearly ready. This is to ensure, you do not boil the curry dish for long once vinegar is added. All the very best in your journey and quest to preparing Indian food....

I always strain the curry once i make it a puree... no matter how much time I blend it, it still leave some tomato skin and its seed... add some more garam masala... and Methi/fenugreek leaves should be added in its last minute before you switch off your stove or you can even add it once you switch off your stove and mix it... you dropped it too soon... it will make your dish, bitter

I LOVE the fact that you put grounded Cumin in that Raita ! Butter chicken looked very authentic. Next time you can try the charcoal method for a smokey flavour (Called the dhungar method)

Kashmiri chilli is not spicy. It is added mainly for colour for the dish. Normal chilli powder is the one that is added for spiciness

Kashmiri chii is not hot or spicy at all. But it is very mild And it is particularly used for red color. It imparts red color to the gravy. Be aware some grocery store owners sell Kashmiri chili in a packet But it is a imitation looks more brown and not red at all.

You start with spicy, if too much spice mix raitha to make mild spicy otherwise raitha meant eating at the end to lubricate your intestine for for good digestion and consolidate excess acid realeaae in tummy due to spicy food

You can add salt later to raita when serving so that it will not become watery you can also add little bit of red onion and green chillies to it You should add kasuri methi at the end so as the most of the flavour given by it is through the smell

Happy to see that u r eating with your hands. Try chicken biryani with onion raita and masala dosai with coconut chutney and sambhar. Ven Pongal and poori masala etc. In our country 30 states have 30 different cuisine. In birayani we have different varieties.

@@alfonsoandjessica to make chicken biryani: Ingredients Oil- 70ml Ghee- 5 tsp Cinnamon, cardamon, star anise, clove- 5 (each) Bay leaf-2 Onion-2( sliced) Tomato -1 Green chilli-2 (for more spice add extra otherwise 2 is enough) Coriander leaves- handful (cleaned and chopped roughly) Mint leaves - handful Ginger-50g Garlic-25 g Red chilli powder -1 tsp Garam masala- 1/2 tsp Curd-100 ml Salt - 1 tsp (as required) Chicken -1/2 kg Basmati rice -1/2 kg For making: 1. Grind garlic and ginger in a blender as fine paste and keep it separate. 2. Try this in rice cooker or pressure cooker for easy convenient or else cooking pot on stove (your choice) 3.Add oil and ghee ,when it is hot add cinnamon, cardamon,clove,star anise and bay leaf 3. After 1 min add onion and saute it till it turns light brown colour. 4.Then add blended ginger garlic paste and keep saute it. 5.Then add mint leaves and coriander leaves and saute it till it shrinks 6. Then add chicken and green chilli to the cooker. 7.saute it for 5 min. Chicken leaves some water. At this time add red chilli powder and tomato. 8.when tomato turns mushy add curd and saute for 2 min. 9.After that add water 1 litre of water and salt 10. When it starts boiling add rice and garam masala powder (optional). 11.close the lid and cook for yummy yummy biryani Tip: 1. Cook directly in rice cooker or make it in a vessel after all process for cooking u can transfer it to rice cooker. 2. Make raita ( curd, onion, a pinch of salt) 3.Salt should be added perfectly. After adding rice check the salt , it should be little bit salty.when it boils with rice it match perfectly.

Great video Jessica! Loved how you pulled the whole thing off ❤️. One request for you would be to try a recipe where you don’t blend the curry. Most of the times, we don’t blend our curries and you could enjoy the texture more. You could even grate the cucumber coarsely for raita, instead of dicing it. And yeah, a secret tip is to add just a pinch of sugar to it, to balance the flavours. Lots of love 💗🌺
