That pulled pork empanada gave me an idea. I often smoke uncured hams then add in my Carolina style bbq sauce. I bet it would be great as an empanada! I really need to learn how to edit video. 🤦🏻♂️

Al- I just got my Tagwood BBQ smoker it is awesome. I live in Virginia, so I have about maybe a month or two before I can use it, but I am already prepping. I do have a requst for a video and or tips. For my first Asado, what cuts of meats do you recommend and why. For example should I do a tri-tip and tenderloin or perhaps exchange one for a pichana. Perhaps I should skip all three and do the Big Boy the Vacio. What is the different characteristics of each meat when it comes to taste. I guess the trade off is how long each piece of meat would take to cook. BTW which Vacio- Corte Argentino adverstising two types on their website I presume the bigger of the two. Lastly If I do chose the Vacio since its three different muscle, I would love to see a video on how to slice each muscle for maximum tenderness. Thanks again and keep up the great work.

Vacio, salt and pepper, low and slow until very tender. There's another way where the vacio is cooked with spices and is covered about halfway through with milk, sounds weird yeah but it's actually a great tenderizer and adds a nice amount of flavour. Put that in the oven for like 1 - 2 hours, flipping when you see that it gets real golden, refill the liquid if it gets too low. The idea is that the milk reduces, starts to sort of curdle at some point. When I finished cooking the vacio, I cut it in long slices if it's the more tender part or thinner slices if it's the not so tender but more beefy part.

any hearthy stuffing for empanadas : make that at least one day ahaed. Them flavors must be able to sleep together ! And you can prevent the sad grey color and ditto flavor of you ground beef, by baking it in small batches. Give it the time to color, just like you do with a burger or a steak. and only add the veggies after all meat is baked, they will deglaze all of the precious baking bits from your cooking pot. If you add the spices like in the video = double flavor party !
