The spinal chord probably wouldn't make noise, most of the noise would probably come from muscle tissue being torn open. Real life isn't like mortal kombat where Scorpion rips out people's spines. The chord is not capable of doing that, and the cartilage in between each vertebrae is for compression not holding it together.

The way the alien's perspective came about seemed kind of allegorical. It appears as though its consciousness was conjured from nothingness. Briefly suspended in the primordial imagery of the cosmos, and then rapidly integrating into the perspective of this alien subject. Maybe Ridley is trying to demonstrate the miracle of all life, even if it means to slaughter ours in the process.
