Hi, I am professional pastry chef here in Portugal and I have a few recipes of my own that I developed over many errors, but everytime I tell people I developed them people (other chefs) lough at me as they think nowadays Nobody owns a recipe and nobody seams to care much about it. You are so right people tend to forget that most great recipes were developed by someone. As a professional I always write or let superiors know that for example the great brownie recipe I use is Vanessa's and my favourite baked cheesecake is Nigella's. I gave up giving people all my recipes and now I rarely share a full recipe, you are so so kind. I love all ur videos

There are two considerations in this. Should one respect someone else's work and give credit when they use it in their own creation? Yes, definitely. Most great/famous chefs even mention the original person when they modify a recipe to suit their taste/vision. I guess you could say GG did the same when comparing her take on the Italian meringue buttercream. Patenting a recipe though, is a whole other story. In most countries, the law says it is hardly ever achievable unless the food is non obvious. For example, if you had been the first person every to invent Italian meringue buttercream, there could be some ground. But if you start using an existing recipe that is not yours, twist it to fit a particular purpose... Nigella, the Barefoot Contessa, and others, go through countless rehearsals and fine-tuning of their recipes before they give them away to the public in five minutes. They dont expect credits, the secrets of the trade are given to home chef and the professional one.

The saying that "there is no such thing as an original thought" the first time that I made Italian buttercream as a young adult I used cold butter and just kept going going until I could use it because I couldn't afford to replace it. She is smart enough to patent it and go public with it. Good for her!! For that alone I have no problem giving her the credit , but do I think she is the first? I don't know, I was 21 when I did it and I am 52 now.

its exactly the same ingredients as an italian meringue buttercream, jus the temperature of the butter is cooled, not roomtemperature. thats the whole difference. its not a new form of buttercream, just different processing

I came across glossy Korean buttercream flowers under general buttercream roses here in KZbin then saw them call it glossy Korean buttercream with a recipe by GGCAKaft who I looked up the recipe on here and it came across this video. I think it was great that you patent the recipe and was able to share it. I know I've done a technique like this what there was water in the buttercream for putting butter too cold as I've done before by accident. Who knew that it would be used to be making these kind of flowers. I've made cakes for years and this is the first ever thing recipe like this. Thank you again for sharing it 🙂

That was well worth getting the patton for the technique. I think you should have just kept your technique to yourself....people are jealous & envious of others accomplishments. I found you only because I saw a piping tip by ateco that was considered a Korean piping tip. One of the reviews suggested looking on KZbin for a Korean buttercream recipe. Having never heard of it, I was curious and did a search coming across several. Yours was the second video I watched and I am so glad I did. I understand now why you patened the recipe and consider it different. I'm not a pastry chef so I didn't know that certain buttercream even if smooth, and still workable was considered a "fail" and scrutinized. Definitely, you using this type of bc intentionally is truly your idea and a lovely one at that.

Thank you very much GG for sharing the recipe with everyone. I can see the hurt in your eyes while talking about the same in the beginning. I hope you are doing well. I stumbled across "GG glossy buttercream" while reading about different buttercream used around. The description given there was simply an Italian buttercream using cold butter but it's way more than just that and the result is beautiful. If it were to be described, it would be a buttercream made with a meringue which is started out as a French and finished as an Italian and brought together with cold butter while keeping close check on temperature. I usually use Italian buttercream but sometimes, when in a rush or when the temperatures aren't favourable, I've added in butter that is slightly below room temperature and obviously, it splits a little. I hate wasting food so I just mend the split buttercream by slightly heating it a little and whipping again, this usually gets it together. I was almost sure that you'd do the same but this is completely different and I really want to try this recipe! Thank you very much again GG! Wish you the best! Take care.... 😁
