This no-bake almond butter cup is rich and chocolatey with just the right amount of almond butter flavour. And if you don't have almond butter, of course you could use peanut butter instead.

Makes 24 minicups
Ingredients:
-24 minicup liners
-2 minicup trays
Bottom Layer:
-1 cup chocolate chips
-1 tbsp coconut oil
Middle Layer:
-1/4 cup maple syrup
-2/3 cup almond butter (or peanut butter)
Top Layer:
-1/2 cup chocolate chip
-1/2 tbsp coconut oil
1/3 cup crushed pistachios
Instructions:
In a bowl, add 1 cup of the chocolate chips and 1 tbsp of the coconut oil. Melt in the microwave 30 seconds at a time.
Add about 1 tsp. of mixture into the 24 mini cups and place in the freezer for 30 minutes.
Add the almond butter and maple syrup to a bowl. Stir to mix and then melt in the microwave for 15 minutes.
Add approx. 1 tsp. of almond mixture to each mini cup and try to evenly smooth into the cups.
Place back in the freezer for 15 minutes.
Melt 1/2 cup chocolate chip and 1/2 tbsp. coconut oil, 30 seconds at a time until melted.
Add to approx. 1 tsp. of chocolate mixture to each minicup.
Sprinkle with pistachios.
