Makes 12 large cookies or 15-16 medium cookies
Ingredients:
1/3 cup (80g) Butter, softened
1/2 cup + 2 tablespoons (125g) White/brown Sugar
1 Egg, large *or 1 medium egg + egg yolk
2 teaspoons Vanilla extract
2 cups (200g) Almond flour/ground almond
1/4 teaspoon Salt
1/2 teaspoon Baking soda
1/2 -3/4 cup (60-90g) Chocolate chips
Directions:
1. Preheat your oven to 350F (180C). Line a baking tray with parchment paper and set aside.
2. In a large bowl, cream together butter and sugar. Add the vanilla and eggs, mixing until incorporated.
3. Add almond flour, baking soda, salt and mix until incorporated.
4. Fold in the chocolate chip cookies and give a good stir.
5. Using a medium sized cookie/ice cream scoop, approximately 1 ½ tablespoons, drop dough balls onto the parchment paper lined cookie sheet approximately two inches between dough to allow room for spreading.
6. Bake for 10-12 minutes, or until slightly golden around the edges.
7. Allow to cool before serving.
