Hi Christine Tickle, we got somewhere around 16 decent sized portions out of the cake but you could get a few more if reduced the portion size

+District Two We didn't refrigerate ours, however we make our cakes in a cool air conditioned room. If you're working in a hot kitchen then you can refrigerate the cake to firm up the buttercream/filling making it easier to cover.

We used a premade genoese cake for ours but you can use pretty much any cake that can hold its shape well. A simple genoese cake recipe would be: 250g/9oz caster sugar 8 medium eggs 250g/9oz plain flour 50g/1¾oz melted butter Beat the eggs and sugar until thick and pale, then fold in the flour and butter. Divide into lined and greased cake tins. Then bake for 20-30mins at 180c / 350f / Gas Mark 4 That would make around 4 6" cake layers or a couple of 9".

+Onika Phillils yes you can, you'll need to adjust the quantities and sizes of everything else so there in proportion and you may need to use more than 4 cake layers to get the height needed
