Ingredients:
For Marinating Potatoes:
• छोटे आलू (Baby Potatoes) - 500 grams, parboiled and peeled
• दही (Yogurt) - 1 cup
• अदरक-लहसुन पेस्ट (Ginger-Garlic Paste) - 2 tbsp
• हल्दी पाउडर (Turmeric Powder) - ½ tsp
• लाल मिर्च पाउडर (Red Chili Powder) - 1 tsp
• धनिया पाउडर (Coriander Powder) - ½ tsp
• जीरा पाउडर (Cumin Powder) - ½ tsp
• गरम मसाला पाउडर (Garam Masala Powder) - ½ tsp
• बिरयानी मसाला (Biryani Masala) - 2 tbsp
• तले हुए प्याज (Fried onion) - 1 cup
• नमक (Salt) - to taste
For Biryani Rice:
• बासमती चावल (Basmati Rice) - 2 cups, soaked for 30 minutes
• तेल (Oil) - 2 tbsp
• तेज पत्ता (Bay Leaf) - 1
• लौंग (Cloves) - 4
• हरी इलायची (Green Cardamom) - 2
• बड़ी इलायची (Black Cardamom) - 1
• काली मिर्च (Black pepper) - 8
• बिरयानी एसेंस (Biryani essence) - 1tsp
• नमक (Salt) - to taste
For Biryani aloo:
• टमाटर (Tomato) - 2, finely chopped
• हरी मिर्च (Green Chillies) - 2, slit
• धनिया पत्ते (Coriander Leaves) - 1/2 cup, chopped
• केसर (Saffron) - a pinch, soaked in 2 tbsp warm milk
• तेल (Oil) - 2 tbsp
• नमक (Salt) - to taste
• पानी (Water) - as required for boiling rice
For Biryani :
• बिरयानी चावल (Biryani Rice)
• बिरयानी आलू (Biryani aloo)
• अदरक-लहसुन पेस्ट (Ginger-Garlic Paste) - 2 tbsp
• धनिया पत्ते (Coriander Leaves) - 1/2 cup, chopped
• पुदीना पत्ते (Mint Leaves) - 1/2 cup, chopped
• तले हुए प्याज (Fried Onion)
• केसर दूध (Safron Milk)
Biryani Masala Ingredients:
साबुत धनिया (Coriander seeds) - 2 tbsp
जीरा (Cumin seeds) - 1 tbsp
सौंफ (Fennel seeds) - 1 tbsp
लौंग (Cloves) - 10-12
काली मिर्च (Black peppercorns) - 1/2 tbsp
हरी इलायची (Green cardamom) - 5-6
काली इलायची (Black cardamom) - 1
दालचीनी स्टिक (Cinnamon stick) - 2-inch piece
जावित्री (Mace) - 1 small piece
जायफल (Nutmeg) - 1/4 (grated)
तेज पत्ता (Bay leaf) - 2
सुखी लाल मिर्च (Dried red chilies) - 3-4
स्टार अनिस (Star anise) - 1
Instructions:
Dry Roast the Spices: In a pan, add all the whole spices (except nutmeg) and dry roast them on low flame for 2-3 minutes. This enhances the aroma of the spices.
Cool the Spices: Once roasted, remove the spices from the pan and let them cool completely.
Grind : Once cooled, grind all the roasted spices along with grated nutmeg in a spice grinder and grind all the spices coarsely.
Store the Masala: Store the biryani masala in an airtight container. It will stay fresh for up to 2-3 months.
