Dam, was it a victim of the pandemic? I was super excited for Good Eats Reloaded, so it’s a shame it didn’t get renewed. Studio executives are probably too focused on “reality tv” style food shows rather than actual good informative content.

Words to live by: "I trust Alton Brown." I'm 27, back when cable was all we had, watching The Cooking Channel with my mom was the top of my televised satisfaction. Alton/Good Eats was and always will be our favorite. I've attempted cocktail sauce numerous times. It never quite hit the mark. I will be trying this recipe within the coming week.

@@CrypticCocktails This is pretty much my recipe. I use the jar horseradish so I leave out the vinegar. My shrimp come already cooked from the Costco bag; I have to defrost them.

I agree. Maybe he will finally give us a recipe for homemade ketchup as well. I love the Good Eats mayo and as we've already got recipes for all the other major condiments it only seems right after waiting for so long.

I have always loved watching your show. When my grandson was young he would watch with me when visiting, which was often. If I was not in the room he would yell hurry Gran El Loco is on you'll miss him hurry. He is now serving his country in the Marines. When he visits if you're on we watch. Thank you for doing that show and teaching me and my grandson.

Gotta say… that cocktail sauce from the original is now a family favorite. I do use fire roasted tomatoes, but other than that, the same recipe. It only has a few ingredients, and normal kitchens are stocked with most already. Not that this makes me a authority, but we live in Wrightsville Beach, NC… so we eat a LOT of fresh shrimp, and my family actually brought YOUR cocktail sauce to our favorite fried seafood restaurant (Something Fishy) because the in-house stuff didn’t make the cut. I’ll sure try the new one… but you’ve set a high bar for yourself. Thanks for everything over all the years! 🥂

I love the new sauce idea. I've always made your version of the shrimp cocktail that called for broiling the shrimp on both sides, though I actually use the grill instead. Interesting that you're steaming them now. I'll have to give that a shot. Thanks for the update!

I first started watching Good Eats almost 15 years ago (nearly every episode was available in pirated form on KZbin at the time, sorry) when I began dating my girlfriend. I didn't know much about cooking then, and I wanted to impress her with a nice dinner when she came over to my apartment. It must have worked because now she's my wife and we have an amazing daughter together.

Struggling to close the "lotus" steamer basket... I felt that. Playing with one of those as a kid and it always getting stuck. I think I'm gonna have to try the cocktail sauce... luckily, I have The Book.

3:28 I’m not a food scientist, but I am an engineer and I have a concern about using hardware store threaded stock. For this application I would use a food grade stainless such as 316. Most hardware stores don’t stock this because it’s very expensive, where they usually stock galvanized steel or 304 stainless. Provided it’s kept clean and rust free, probably doesn’t matter what steel you use, but it was just a slight concern of me. Maybe you can elaborate your thinking behind your design a bit Alton, as I think your tiered steamer basket is very clever :)

Hey well wow. I don't know much about the cocktail sauces. I've always thaw out the frozen shrimp in cold salted water. I never thought of adding sugar to it.. This is very interesting since the last cocktail sauce was quite disappointing. So is steaming better than cooking the shrimp in the oven ? Thanks for tips. I bet yours were so much better than I have ever tasted ❤

Steaming would probably produce a much more moist end product than baking, since it’s cooking in evaporated water it’s able to retain its moisture much better.

Captain SIR, i noticed you used steaming hot water at 2:06 while saying room temperature water sir, the plan seemed to be to cool it down anyway with ice would you recommend the hotter water to dissolve the sugar and salt, or keep it room temp for other reasons, i ask only out of curiosity SIR!

Poop chute! I died laughing. I have to remember that one. @altonbrown I had a waiter tell me that the poop, that I showed to him, was just protein!! Protein! I said " no... it's poop. It's waste. It's not meant to be eaten. Haven't the shrimp been cleaned? " He told me he had never heard of that. Lol. I refused to eat anymore shrimp. Disgusting. Wait staff needs to be better informed. Like a lot better.

@altonbrown: Thanks for these new mini-eps! Saw you at many book signings and have watched and enjoyed the shows for nearly 25 years now. Thanks for all the science and laughter with puppets and W animosity! :) I've always loved the original shrimp recipe. The 40 Cloves and a Chicken dish was probably my all-time favorite, and I have made just about every other recipe you ever gave.... except the elusive country ham. That City vs County ep was fantastic, and now that I've moved to the east coast maybe I can actually find one. Certainly a closer drive if you have any suppliers to recommend. Cheers!
