How ignorant of a statement " as we turn to the races now dead" last I checked Italians,Greeks and Egyptian peoples still exist ,although the Empires fell the people weren't wiped off the face of the earth. I'm pretty sure he meant their ancient cultures, which were quite different to their modern counterparts, not the literal races in terms of all people of those countries. So not (ancient) Egyptians etc. are dead but their old culture, religion, beliefs etc., the "race" of enlightened Egyptians so to speak. The term race was probably used more openly back then to mean different things, not just genetic race (which would be inaccurate to call Italians and Greeks different races anyway since they are almost the same).

It's because the peoples that occupied these places in the ancient world had very different genetics than today. The closest people genetically to the Pharaoh Tutankhamun are not the modern-day Egyptians (~2% DNA), but the British and Irish (~70% DNA). After their empire fell, the country was overrun with Arabs who forever changed the genetics of the people. Similarly, in all of their mythology, ancient Greek heroes are regularly depicted as having golden or red hair, and blue or green eyes. These features are rarely seen in Greece today, as they too had a huge Arab contribution to their genes due to being under Ottoman occupation. But we know that they really did look like that in the past, because many of Alexander's soldiers did not return to Greece and instead settled in what is now Pakistan and Afghanistan. The blue and green-eyed people living there today do not share genes with their fellow Pakistanis and Afghans but they are related to modern-day Greeks.
