ALU PARATHA RECIPE
Here's a delicious recipe for Aloo Paratha, a classic Indian flatbread stuffed with spiced potatoes:
Ingredients:
For the dough:
2 cups whole wheat flour (or all-purpose flour, or a combination)
1 teaspoon salt
Water
For the filling:
3-4 medium potatoes, boiled and mashed
1/2 to 1 teaspoon finely chopped green chilies (optional)
1/4 to 1/2 teaspoon red chili powder (optional)
1/4 to 1/2 teaspoon garam masala
1/2 to 1 teaspoon dry mango powder (amchur powder) or lemon juice
1 tablespoon chopped coriander leaves (optional)
Salt to taste
Other:
Oil or ghee for cooking
Instructions:
Make the dough: In a large bowl, combine the flour and salt. Gradually add warm water, kneading until you get a soft and pliable dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
Make the filling: In a separate bowl, mash the boiled potatoes. Add the green chilies (if using), red chili powder (if using), garam masala, amchur powder (or lemon juice), coriander leaves (if using), and salt. Mix well to combine.
Assemble the paratha: Divide the dough and filling into equal portions. Roll out each dough portion into a circle. Place a portion of the filling in the center of the dough circle.
Seal and roll: Pinch the edges of the dough to enclose the filling, forming a semi-circle or a pouch. Gently roll out the stuffed dough into a round paratha, dusting with flour as needed.
Cook the paratha: Heat a griddle or tawa over medium heat. Add a drizzle of oil or ghee. Gently place the paratha on the hot griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through. Press down gently with a spatula while cooking to ensure even cooking.
Serve: Brush the cooked paratha with additional ghee or oil for extra flavor. Serve hot with yogurt, chutney, or pickles.
Tips:
You can add other vegetables like grated carrots or chopped onions to the filling for extra flavor and texture.
If the dough feels too dry, add a little more water while kneading.
For a flaky texture, you can brush the rolled-out paratha with melted ghee before cooking.
You can also cook the paratha directly on a hot pan instead of a griddle.
