Hello Chef. Totally love everyone of your video. I never went to a culinary school. I was trained by a michelin star chef when I was studying for in university. He took me under his wings and taught me so much that was so many years ago. He told me cooking is like a blank canvas and you can create whatever you want. Follow certain rules. He told me cooking is a passion, love and creativity. I am now a cook, just a cook not a chef, working in a care home, here in England. I have to cater to so many dietary needs and requirements. I even created my own batter for the ordinary simple cakes. I learn from you also and I thank you for sharing it all. Once again thank you. Love from England

I am classically trained, a lot has changed since the early 1970s and I am always learning and trying new techniques and methods but the fundamentals will always be with me. Please keep on keeping on! I have followed or tried to follow some of the "famous chefs", but in the end their channels are all about selling their wares, whether or be cookbooks, online classes, etc. At the end of your videos I feel like I have learned something from someone who honestly wants me to learn something. Billy I was not here from the very beginning, but I was when you were in the couple of thousands subs, I knew even back then that you are not only an amazing "chef de cuisine" but also an amazing person, it shows so easily. I may not write comments so often anymore, but I keep watching and coming back for the recipes that inspire me so much. You are a wonderful teacher and I very, very, VERY much (cannot say how much!!!) appreciate that you have stayed the same: humble, honest, a professional, very patient and hard working person, despite all your experience in the field.
