Pieces of oxtails are seasoned as they're traditionally done in the Caribbean, then brown-stewed on the stove before being placed in the oven with beans and coconut milk to gently cook until the meat starts falling off the bones.
For the stewed oxtails you'll need...
2-3 lbs oxtails (trimmed)
1 small onion
1/3 scotch bonnet
6 grape tomatoes (any tomato will work)
1 tablespoon Caribbean Green Seasoning
3/4 teaspoon salt (adjust)
1 teaspoon worchestire sauce
1 teaspoon ketchup
1/4 teaspoon black pepper
2-4 drops angostura bitters
1 tablespoon veg oil
1 heaping tablespoon brown sugar (golden)
1 cup navy beans (soaked)
1 scallion
2 cloves garlic
6 allspice berries
4 sprigs thyme
1 + 1/2 cup water
1 cup coconut milk
2 tablespoon chopped parsley

I made oxtails for the first time using this recipe and it was a great success. So much so that I made it twice in one week. One thing to make sure of is that if you float that pepper make sure you have the oven temperature at 325 or 350 degree. Anything higher and that pepper will burst and melt into the stew. The longer it sits the hotter it will get. I cooked mine for 3.5 hours. At the 2.5 hour mark I went in and took out the pepper and resumed the cooking.

This looked just amazing. I had oxtails for the FIRST time this year and am hooked. I will try this with my lentil beans. Seems it will pair well with most any legume. Another delish receipe share!

Hello! This looks delicious but i have a question, im currently living in a place with no oven but would still like to try this. Could i replace putting it in the oven with simmering it on low heat maybe with the lid on? And if so how long would i have to do this. If not which oxtail recipe would you recommend of yours that doesnt require and oven. Thank you!

9:20 Pressure cooker conversion...put in the pressure cooker at this point for 1 hour and do a natural release with the steam and it's done. I'd add some roux at the end to thicken the gravy as well. Oxtail is $8 a pound here in Baton Rouge, Louisiana.

Expensive oxtails? Where do you live? You obviously don't live in the United States where oxtails can be prepared twice a month, at least. Only $15 per pound. I spend more at Wendy's and Starbucks ! Haha ! 🥴

My mom makes all the ox tails, I would make this myself, but I don't know how to use the pressure cooker, next time, I will ask my mom to add coconut milk or fresh and process coconut shaving, when she makes oxtail soup.

caribbeanpot Modern pressure coolers are foolproof and completely safe. Cuts this recipe down from 3 hours to 1 hour and you can't taste the difference.

LOL! I can't imagine anybody bothering to cook such a little bit of oxtail meat. So I would cook up at least a 5 lb bag of oxtails or not bother with it at all. Though otherwise, what a great recipe! I'm a have me some oxtail and cook this recipe for my New Years Eve dinner! After browning in the pan I'm throwing them bad boys right in the crock pot!

Bonnie Cotman that's really a small amount of oxtail. At $10 for 1lb I understand. In the USA it's $4.99 a lb.

tisha4lives Wow... 10 bucks for 1 lb of oxtail? But you are right about the cost in the US because a 5 lb bag at my local Food Bazaar supermarket is about $25, which is 5 bucks a pound.

I'm not paying for oxtails! Prices are ridiculous, when they used to be almost free at the butcher. Can you suggest any other cuts for this recipe because it sounds delicious.

brewatch Any old stew meat would work. The tougher the cut, the more flavorful and will still fall off the bone.
