@@Dctctx I've seen similar in Japanese videos of food prep. I'm a chef in northern California near Napa and we wash our veggies we import in a similar fashion to make sure we get any organic pesticides, herbicides or fertilizers off. Although during the spring, summer and fall we are able to grow most of our own fruits and vegetables, there is still some that has to be bought, especially potatoes and onions.

I have worked at a lot of different jobs over my years, but without hesitation food service would be my #1 choice. I've never felt that combination of total physical exhaustion with the overall feeling of accomplishment that you get when you have a handful of skillful people working together to serve large amounts of patrons during a specific time frame. It's organize chaos for sure, but when it goes off without a hitch so is the feeling you get when you know you were part of the organized chaos that made it happen. Take Care...❤

NOT if you use SOAP! Do you know how many chemicals are in detergent or dish washing soap? And fruit it POROUS! You are trading dirt and bacteria for chemicals in your body. Cleaning with all water is excellent but NOT SOAP.

With all the competition that exists in ever area of work these days, where products & prices are so comparable all you have to set yourselves above the rest is presentation & customer service. I was amazed during my first trip to Mexico by how much better the fruits and vegetables were in the markets. I live in NC and thought we could abundantly grow anything but tropicals, but what I saw in markets there was amazing in variety and freshness.

I watched a video on cutting watermelon recently. The method was a little more streamlined than the one in this video. Cut both ends of the melon flat. Stand it up vertically, and cut the rind away in wide strips, guiding the knife along the curvature of the melon. Trim any remaining white areas. Then place the melon on its side and cut it into round disks about an inch wide. Store the melon disks in the fridge in a covered bowl until you're ready to serve them. Take out what you need and cut the disks into chunks or use a melon baller. The knife used was an 8" Victorinox chef's knife.
