I don’t, he is putting the outside of the peel on the same plank. Plank is wrong (easy to contaminate) and it is’nt cooled. Should wash fruit before peeling.

LOL, reading the three prissy replies on the "dirty outside". Watermelon looks washed, the Rockmelon/Cantaloupe is probably washed a bit, then he wipes the board with the inside of the fruit (have you tried washing one? you could porbably remove all the large particles but thats it unless you want to stand there scrubbing like an idiot). If barely or even a bit dirt is going to hurt your feelings, maybe your immune system is just as weak. Considering its a stall as well where can you get fresh running water. Changing gloves every 5 seconds is just waste. If Bare hands? you bimbos will just complain he isnt wearing gloves.

Al Husna It’s not the knife, it’s how sharp it is... Knives like anything else need to be cared for properly. Routine Sharpening of ur knife will make a HUGE difference in its effectiveness. My dad sharpened his knife every single time ~both before & after~ he used it. You had to be extremely careful if using a knife of his. If you aren’t accustomed to using a knife with a super sharp edge...the chance of accidentally cutting yourself is incredibly high. Have bandaids close-by just in case!!
