Lao food for the win!!! Bursting with flavour-flave 🔥🔥🔥! I like the way you described Mok Pa. It tasted like home! It sure is a comfort food. For extra heat with khao poon try it with with a whole fried chili pepper with each slurp! Usually you can find whole fried chilies as garnish or on the side. Or you can add some ground chilies too! Enjoy! 😋😋🌶🌶🌶

The pink sausage is som moo it is actually fermented, and a lot of people eat it without cooking it. Which keeps the very nice complex textures intact, and the slight sourness from being fermented can be tasted. It goes really well with some sticky rice and papaya salad. Cooking it softness the pork skins that are within the meat mixture, and dulls the sourness. You should definitely giving it a try the other way and see what you think. You can find it at any Thai, Vietnamese, or Lao store! Tip from a mixed Lao girl!

Lao people have Similar experiences to African American History, Lao became slaves when Thailand was newly formed. Lao people literally built the country, but were and are still looked down upon til this day. All the best food (spicy and dank), music (morlam) and culture from Thailand is from Issan (which means NORTH EASTERN) Thai government even have policies to erase Lao identity, an begun thai nationalism propaganda. Thai even use the term, "Lao" as a slur. be Lao and proud yall!
