Amazing Onion Fried Bakes using a Stand Mixer

Fried Bake (also known as "fry bake") is another very popular Trinidadian breakfast "bread". It is actually fried, not baked. If you have heard of the most famous Trinidad bake and shark, this is my recipe for the "bake" with a little twist. Find the original recipe --follows; very similar to this with the exception of the onion.

This concept was shared with me by my cousin Deera who visited from Trinidad recently. She made it for my mom who loved it and I was eager to try.
The end result is surprisingly not onion-y, but the onion seems to lend a mild sweetness to the bakes. I used sweet onion which could have been the reason it was mild. Use your judgement when using the stronger yellow onion.

Onion Fried Bakes Recipe
Makes 16
Ingredients
4 cups unbleached all-purpose flour
4 tsp baking powder, aluminum free
1 tsp Himalayan salt
2 tbs brown sugar
2 tbs butter, room temperature
1 cup grated onion,
Warm water, about 1 cup
Oil (for frying bake) (3 cups)
1/2 tsp yeast - optional (makes for a more bread-like bake)

Hey Ria. Tried out the bake yesterday with some smoked herring. It's a nice change from the regular bake and it's very tasty. I could see it being something different especially for a Sunday brunch with guests over. Definitely worth trying out for anyone thinking about it. Oh trust me I appreciate your videos, believe it or not you've helping me get through my weeks, months, years, since I was diagnosed with covid in 2020 I don't know if you remember I told you. Your videos were helping me get through covid the colors the sound, relaxing well put together videos. Healthy foods. I saw your note that your hubby was saying not to throw the oil because it's submerged in the oil but I saw him throwing the oil. LOL..Yes, that does help in swelling those bakes. RIA thanks for the fry bake recipe with onion. My sister in Trinidad used to put grains of garlic in the oil for flavor and that gives the fry bakes an awesome flavor.
