What do they do during the restoration process? Do they add clay to the sculptures? Wax them?

I think they removed the dirts and plagues.

By bleaching and over cleaning the stone to a bone white the shading and dimensionality is lessened. The "new" looking sculptures look like the fiberglass copies in Ceasar's Palace Las Vegas. Not the fountains I knew and loved.
