A morrocan tagine is meat (beef, lamb, goat, fish) with vegetables (all vegetables), dry fruits (prunes, almonds, raisins, apricots, figs, etc.) or even wet fruits (oranges, quince, for example). The combination of the mentioned ingredients and spices is not arbitrary, but rather requires harmony. There are, I believe, no less than 100 types of tagines, most of which are traditional and go back at least ten or twelve centuries.
