發酵而產生異味的食物，在每個文化裡面都有：西方的藍紋乳酪，北歐的醃魚，日本的某些醃製食品，東南亞印度的某些地方食品，都有臭味，這是因為保存手段產生的味道，但最後到了食物不缺乏的時代這項東西還存在，還被食用，大概也是人除了一般的酸甜苦辣鹹，有時也會想要嘗點極端的味道，也許可以提振精神刺激味蕾，也許可以使人甦醒，不論如何，都是人類世界的一部分。

臭豆腐之所以臭的原因在...賣臭豆腐的攤販..有時故意把從滷水撈起來的豆腐..不沖洗乾淨..把滷水潵底洗掉..則臭豆腐就不那麼臭了...賣臭豆腐的攤販超級聰明..有時故意洗不太乾淨滷水在炸臭豆腐時..臭味會四溢到滿條街...就像人們吃了鴨片一樣..味覺神經被制約了...聞臭而來大吃臭豆腐哦... 臭豆腐澈底把浸泡的滷汁洗掉..洗乾淨...臭豆腐就不那麼臭了...吃起來就會缺那份味覺上的臭勁哦...
