All she needed to do was get one bag in for the win at that point…if she knocks one in with the one she had in her hand she would win. So basically all she needed was one of her 2 bags on the board or one in her hand to go in to win

You answered your question yourself. She airmailed it. She airmailed the last bag, the bag in her hand. It went straight in the hole, without hitting anything else. (That's what an airmail is.) If you re-watch the video, but first change the playback speed to the lowest setting (.25), you can clearly see her last bag go in the hole.
